1. Introduction: My name is Simon on home cook with a real passion for cooking. I have gathered through the years a lot of traditional Lebanese and Mediterranean recipes for savory dishes and desserts, but I would like to share with you through this class. I'm not a professional chef. I know how to cook from my mother on my trying, so I know very well that cooking can seem difficult challenge. And too often the recipes, especially for exotic cuisines, can seem too complicated to even try. That's why my aim indeed lessons is to try and simplify things as much as possible so that even the most inexperienced cooks cannot achieve great results. As for the Lebanese food itself, it's becoming more and more famous all over the world with entrees and lips like the homos or the bubble savory dishes like the Mother of the Year, the Mafia on desserts like the connection, Lebanese cuisine uses a lot off whole grains, beans, vegetables and fruits. The most frequently used protein is bulging, but we also use red meats like lamb meat on beef on fish and seafood. Lebanese cuisine also includes copious amounts of garlic, onions, lemon juice and olive oil. You really find the recipe without some lemon juice and olive oil involved. Somehow, as you see, Lebanese cuisine is heartwarming and, if done properly, can be the best comfort food that you'll ever find. So here we go. With our first lesson, I start in a non traditional way with a dessert instead of a savory dish. I start with the Navy, which might arguably be the most famous Middle Eastern desert and definitely a people pleaser on a favorite among locals and foreigners. 2. Lesson 1- Knefe: good morning. Everyone, in our first lesson way, are going to learn how to prepare the Navy. The Canadian might be the most famous Middle Eastern Lebanese version is made fine semolina on DWhite, Brian cheese and soaked in a special sugar syrup. The ingredients are as photos 500 grams off semolina, though also known as can. If it'll or fact significant in Arabic, you can find that in the freezer section off a Lebanese grocery store or in any large supermarket, plus one kilogram off our carriages. Jeans needs to be cut into thin slices and soaked in water at least 6 to 8 hours in advance . Change the water every 30 minutes or so until the cheese loses its selling on about 20 grams off butter to grease the pen, essentially made with art gallery. Geez, some people mix it with grated white, but for the purposes of this video, we will only use encourages this Jesus historically made in the city off acre, also known as we are using a variety made in the Czech Republic, which I believe is the best kind for any reason. You're unable to get our carriages you can use instead of it mozzarella cheese, with almost the same result. Yeah, 3. Lesson 2- Sugar syrup: Hello again. The second lesson is closely related to the 1st 1 on. We are going to learn how to prepare, especially flavored subversive in order to So look, these are the regions one on 1/2 cups of sugar one cup, 40 off lemon juice, a teaspoon off rosewater on a form of orange blossom water. 4. Lesson 3- Sfouf debes: Welcome back, everyone way. We learn in this lesson how to prepare another staple of Middle Eastern deserts at the school. But instead of using the traditional recipe that contains sugar and to make and which ends up giving us the famous Oriental yellow cakes, we'll go for another recipe that substitutes sugar with care of molasses. This makes it a much healthier dessert, especially that current molasses are basically a superfood. Hey, other in Regent's 2.5 cups or find someone you know a cup of all purpose flour to hip teaspoons of baking powder, half a cup of vegetable oil we're using here some flowers or a cup and 1/2 carat molasses 3/4 of a couple off water on some sesame scenes. For decoration, mix the dry ingredients well. That's slowly for the oil on the molasses. Do it by hand. Don't use the machine on not worry about the consistency of response. If it seems too hard on dry, it should become uniformed Afghans you can use for this recipe. Used some pickled crust of this booth, - spread the better, even and put in appreciated often at 100 delivery senses for about 25 to 30 minutes watching closely because over you can test it with. If it comes out clean, it means the metal passport. Sprinkle some sesame seeds for decoration. 5. Lesson 4- Pasta Tahini Sauce: good morning and we'll come back. Everyone in this lesson will prepare a fusion dish that joins Italian and Lebanese food. We are going to cook some pastor with a special tahini sauce. It's very easy and quick recipe. It can literally be ready within 20 to 25 minutes. Tiny for those who don't know is a bust Amit from toasted and ground sesame. Since it's a Middle Eastern creation and the word itself derives from the Arabic word that means to grunt, Tiny is an ingredient that is frequently used in Oriental dishes such as Hamas and Barbara on its one off, the healthiest in regions in the world. Here are the ingredients 250 grams off pasta. This is easily enough for three people 180 to 200 grands of time. The juice of two lemons, the zest of half a lemon, half a cup of water to allow dolly clothes off three smaller ones. Soft pepper and already start by salting on boiling enough water to cover the 250 grams off faster. In the meantime, crushed garlic into a paste with something salt creates friction and helped crushing garlic by keeping it into place as much as possible, - start adding to the tiny some lemon juice and then some water little by little and mixing it that - taste in order to see whether its acidity is enough according to your taste. If you think it's too acidic at more water, otherwise keep adding both in terms on little by little until you get the wanted consistence. This is the consistency, but I personally I'm looking not good, but not business. Season with salt. - I had no knowledge on the lemon zest and mixing the source of their to make sure that everything tastes perfect. Guarded missiles was some Oriana. When the water boys put the pastor in, lower the heat. Cook for 8 to 10 minutes, depending on how you like the dumbness off your pastor. Drain the pasta and let it cool down a bit. Makes it great sometimes on over the pasta and gives it a silky smooth texture. And that's it. I hope you like it 6. Lesson 5- Manakish: we'll come back again. Today. We are going to prepare the most famously Bani Street food, the mish. It's basically a dough topped with very I stoppings such a stein and avoid cheese overfishing. For the purposes of this Nessen, we are using a homemade. It's an endless dough made with wheat flour, vegetable oil war mortar instances on a pinch of salt. I'm going to prepare diamond. These on is a dairy products made from Jane yogurt or drain Salameh, and it's Giant and then made into a variety of forms. It can be rolled into balls or sliced into strips or ground into a fine pounded like the one we are going to use. In this lesson. Ingredients are s forms 500 gram dough time. Olive oil, kissed powder, dust, onions and chopped tomatoes was done by preparing the fish paste but the onions and tomatoes in a bowl on start, adding little by little because powder and mixing it with the onions and tomatoes. Then drizzle some oil and mixing it at the old gradually until you get sick, based. When it's ready, put it aside and save it for later. - Sprinkle some flour on your working space. Cut a piece of a needle than flat in it and shape it with your rolling. Sprinkle more flour as needed. - Notary about the shape. Keep trusting. It will look better when it comes out of the oven. Put the flat Ondo in append line with baking paper. If you don't have any, you can raise the banners, some vegetable oil. Prepare the time spread by simply mixing it with olive oil. This time is dried and mixed. Toasted sesame seeds and so mark at the oil gradually on Don't put too much or the man who she will come out to oily and greasy have the toppings as evenly as possible. But simple food does not have to mean tasteless foot. You will find that this dish is amazingly elevated by the citrus flavors. Is are the ingredients 215 grams of white beans I'm simply using can be. Now if you have time to cook some fresh means, that's even better. But can beans are more than good enough to cloves of garlic, olive oil, lemon juice, and lemon zest, orange juice and orange dust. I'll be using the juice of one large lament and one medium orange. You can also add the juice of grapefruit if you wish to add some mild bitterness to the mix, plus salt, pepper and Cuban. Start by heating the beans. Some people would read them with their own water. However, I personally prefer to hit them with freshwater. In the meantime, starts by crushing the garlic. Consistent. Then add lemon juice and olive oil. Season four, Salton Sea. So that is both. And try to find a balance. Once the beans, okay? These food of only zest and lemon zest. And finally seasoning salt. And that's it. Extremely simple but rich layers of enjoyment. 8. Lesson 7- Spinach stew: Hello and welcome back. In this lesson, we'll be preparing has finished Jew to be eaten with a sign of steamed rice and vermicelli. The ingredients are as follows. 400 grams of frozen spinach, 15 grams of minced meat, one roughly chopped onion, about 13 grams of butter to cloves of garlic, 1.5 cups of water, the juice of two large lemons, salt, black pepper, white pepper, and a bit of sentiment. And immediate but melt the butter at medium heat. Then add the audience and keep moving them around until cooked. Yeah. And then add the garlic season or salt. Like data science. You know. Once the onions and garlic are cooked and the minced meat and season with salt, butter, white pepper. Answer, yes or no. Okay. When the meat is almost cooked at the frozen spinach, then add a cup of water. Apps. And let's cook for about 15 minutes until the spinach is well cooked. And the lemon juice for two to three more minutes. When finished. 9. Lesson 8- Ghoraybeh: Hello everyone and welcome back. In this lesson, we will be preparing that maybe can be described as a sort of middle eastern short bread cookies. They are traditionally made with sugar and animal energy or clarifying butter, and are delicious Lee crumbly and melt in your mouth. Cookies. Are the ingredients. 500 grams of all-purpose flour, 250 grams of gate or clarified butter, to a 100 and grams powdered sugar. Some pistachios for decoration. Start by mixing the soften game with the sugar. If you store your E in the fridge and then get it out 30 to 40 minutes before. If it's called outside and Magee would remain hard even at room temperature, then put it in the microwave for a few seconds until it softened. And using animal ag. But you can also use clarified butter or vegetable soggy. However, these cookies cannot be made with regular butter because the water in the batter would ruin them? No. So current identity. When they are well-mixed in the flour. Right? So for some, that is because you don't know cities that they move. So when we say that set, That's what that magic is. Not known. Don't overdo named the Nope, we want the cookies to be soft and crumbly. Overworking the dough when he made the cookies chewy. When the dough holds together government and put it in the fridge for 30 to 60 minutes. Depending on the power of your fridge, we need the dough to rest and to cool down. Otherwise it will crumble when we mold the cookies. Wonder, DO cools down. You can take a piece of it and put the rest back in the fridge. And depending on how hot and humid it is, whatever you are. It's pretty hot where I am, so I'll keep the rest in the fringe and get it out when I'm done with the first part. All the cookies, however you like them, I'll make most of them interneuron cookies. And maybe if you want to loss and just use a baking sheet, otherwise, the cookies we'll stick to the bank. Decorate each cookie with the pistachio. You can also use by knots or sesame seeds or nothing at all. Buddha cookies in a preheated oven at 115 degrees Celsius and bake until the bottom of the cookies, slightly more than the top should stay white and don't overcook the cookies or they will become joy. This is how the bottom should look like. And that's it. Enjoy. 10. Lesson 9- Oat Cookies: Hello and welcome back everyone. And this lesson, I found that we can bake some old cookies. Maturing gonna go for the healthiest recipe possible. Well, therefore, avoid using any shoulder or artificial sweeteners and use instant organic county. These cookies are perfectly suitable for small children. And I'm actually making them for my two-year-old son. Just be careful of any eventual allergies that you or your kids might have. Here are the ingredients. One cup of oats. Use any old that you might have still got rolled oats or anything. You have two tablespoons of butter or a quarter of a cup of shredded coconut, also known as desiccated coconut. 1.5 teaspoons of baking powder, three tablespoons of all-purpose flour, 14 grams of melted butter, one free-range ANC, two tablespoons of organic honey and the juice and zest of one limit. The preparation cannot be any simpler. Start my mixing the dry ingredients, swelling, and then separately mix ingredients. Well. And finally, mix and the GI and letting regions together, making sure that everything is very well mixed. A tablespoon of white vinegar in order to remove the smell of x. It's cool. Flying the baking paper and flatten a debt to facilitate for a small distance between each dollar scope, seeing that the cookies will become larger when they cook. Yeah. Make preheat the oven at 180 degrees Celsius for 15 minutes. The bottom of the cookies, when they become light golden, it means they're ready. Let them cool down, unintelligible. 11. Lesson 10- Chocolate Sfouf: Hello and welcome back to a new lesson in which you are going to make another is full and desert. But this time it's full for the twist, a modern more decade and take on the traditional Lebanese deserts. We're going for is fulfilled. Brownies mix are the ingredients for a cup of all-purpose flour, two cups of find some Alina, two cups of sugar, two tablespoons of baking powder, one cup of oil, two cups of milk, eight tablespoons of dark cocoa powder, one tablespoon of orange blossom water, and one tablespoon of frozen water. Keep in mind that the measures of these ingredients are for a 40 by 30 centimeter trade. If you want to bake a smaller cake, you can divide the quantities might start by mixing the flower, whether someone, Nina and the baking powder then add the oil and weren't the mixture well by hand, try to smooth out as much lumps as possible. Don't overwork. And to me that we're making. We can use we have three terms. Okay, now, what's going to happen? So for example, Maxwell dissolved. No. And I'm going to slowly add the sugar. Keep mixing until everything is well dissolved. And the sugar and Coco mixture to the DO, start mixing with a weapon. It's, it takes some time, but keep mixing until you get the smallest sticky batter. If you find the batter to be too hard, you can add a little bit of math. You can mix it with your hands. If you find it's easier than with a what. Okay. And then the orange blossom water under rose water tray with some butter over the oil, if you prefer. Right? And just for the matter into the train, try as much as possible to spread the matter evenly so that it cooks evenly as one bake in a preheated oven at 116 degrees Celsius for 30 minutes or until. You can test it with a toothpick. And if it comes out clean, it means the cake has telescoped. Let it cool down, then cut into squares, and enjoy. 12. Lesson 11- Spicy muffins: Hello and welcome back to a new desert lesson. And this video, we are going to prepare some muffins with the Mediterranean twist that consists in us adding a selection of oriental spices. Then go very well when deserts. Let's start with the ingredients. We need. To apples, two cups of all-purpose flour, half a cup of brown sugar, three to four tablespoons of white sugar, one teaspoon of lemon juice, two teaspoons of baking powder. Half a teaspoon of baking soda. 1 fourth of a teaspoon of salt, ginger. Close, one teaspoon of cinnamon, half a teaspoon of nutmeg, two eggs, and half a cup of plain yogurt. Start by building your apples. Use any Apple kind that you like from Granny Smith to that delicious to honey crisp or anything you have or is available to you. I am using to medium sized apples. If you apples are on the smaller side, then used three. Also keep in mind, you can substitute the apples was pairs if you're perfect. So after this into cubes, you can appeal. So for example, here's a nice small bag. What they should have. Water and lemon juice. The lemon juice will stop the apples from turning black. Apples for around ten to 15 minutes or until they become soft. And then prepare your dry ingredients. Mix the flour with the baking powder, baking soda, and the spices. Mix everything in a bowl, beat the eggs and the sugar until well Incorporated. For this desert, I think it's better to meet the mixture by hand rather than with an electric meter. Given that overbidding, withdrawing the muffins, and then add the yogurt and mix well. When the apples are cooked, progressively add the dry ingredients. Undercooked apples while beating the mixture continuously. Yeah. Okay. Keep mixing until you get a uniform. Raise your muffin was some oil. You can also use butter, flour, or simply your silicon or paper muffin molds. And then spawned the batter into the US, an ice cream scoop. It makes things easier. Wait. Make an a preheated oven at 180 degrees Celsius for around half an hour. That's the muffins as usual. And if it comes out clean, it means that they have coped muffins and enjoy. 13. Lesson 12- Regular Hummus : In our first lesson, we start with the inescapable traditional recipe for the homeless. Here are the ingredients. One cup of dried chickpeas, half a cup of any based. The Jews of one lemon, true garlic cloves, pomegranate seeds for decoration. Olive oil and salt, cumin and Publica. Start by soaking the chickpeas in water, would have a teaspoon of sodium bicarbonate, otherwise known as baking soda, for at least eight hours or overnight. If you already think that there is no way you are doing that than simply use a can of cooked ready to use chickpeas. However. And trust me on this, just try it once and you'll see in that fresh cooked chickpeas are on another level. Besides, it may take eight hour, but you don't have too much to do. And just soak them in water with sodium bicarb and leave them. On another hand. If you don't have that much time on your hands and want a shortcut. You can shorten the process by soaking the chickpeas in boiling water. That would cut the soaking time in half. And for information, bicarbonate of soda or baking soda helps to soften the skin of the pulses, making it easier for the dried pulses to absorb some of the soaking water and helping them to rehydrate and soften. After shopping the chickpeas for eight hours or overnight, drain and wash them with clean cold water. Make sure to remove any small pebbles or anything else. Then put the piece in a pot and cover them with enough water so that it goes at least an inch over the chickpeas. Just put your finger in the water. It should get to your first knuckle. When the water boils, skim the form that forms on the surface of the water. The form is actually water soluble proteins released from the beans and will be reabsorbed. So it's not really necessary to remove it. But I know Lebanese chefs who would tell you that the piece will not only taste better, but also smell better. If you remove the phone. Then lower the heat and cool the chickpeas until they become tender or until you can easily Smasher be between your fingers. It should take anyway, between an hour and a 2.5 hours. When the bees are cooked, drain them straight away and wash them with cold water. Which on the one hand. We stopped them from overbooking. And on the other hand, will help peeling the outer skin. Remove as many skins as possible. This would make the homos Crimea and have a smoother texture. But it's perfectly okay if you are not able to peel all of them, which anyway, would probably prove impossible, and set the chickpeas aside and wait for them to cool down. While waiting for the chickpeas to cool down. Prepare that a hinny mixture, stopped by crushing the knowledge. Then go ahead and squeeze the lemon and then mix the tiny crushing garlic and lemon juice. And season with salt. Human is optional and depends on whether you like it's peculiar taste or not. Using the mixture with a bit of cold water. Put the piece in a food processor and pulse it on high-speed until you get a thick paste. Let's start adding the tiny mixture while processing on medium speed and drizzle some olive oil, it will make the nip Crimea and more unctuous. Keep testing the homos and correcting the texture seasoning. And I said that D, according to taste, check, if it needs more salt water, any more lemon juice. If you feed the homeless too thick, we will send it with some water. The processing the mixture until you get a thick. Do you mean that? Okay. And then serve the homeless in a relatively deep dish or bowl. Place the spoon lightly on top of the homeless. And with the other hand, rotate the plate or the bolt in order to make a shallow perverse that will hold the olive oil. That sprinkled some paprika and decorating the hummus with promo crenate seats. Actually liberated how ever you want maybe sprinkle some parsley, some pine nuts, or maybe normally shipped with mint leaves or basic, then serve and enjoy with beta or Lebanese and breadth. Hi. 14. Lesson 13- Beetroot Hummus: In our second lesson, we will prepare a very special almost live, with the main n-region being beet roots instead of chickpeas. Theoretically, this dip should not even be called homos. Since homos in Arabic literally means should be. However, since the recipe is based on the traditional almost recipe and involves the hiney based. This dip is customarily known as Michel Thomas lip. These are the ingredients. One kilogram of beef roots, 185 grams of tiny butter, two cloves of garlic, a tablespoon of balsamic vinegar, olive oil, the zest of one lemon and the juice of half a lemon. Some rosemary springs, some brown sugar, salt, and white button. Start by cutting the beads in half or in thirds. Depending on the size of each beetroot. This will help them cook faster. Beet roots are tough, so be careful while cutting them. And then go to each site with some olive oil. The olive oil will help cook the beads, prevent them and the bottom from burning, and we'll give a great taste as a bonus. Then add about a teaspoon of butter between the slices. In fact, put as much as you want. You can even skip this step. If you want to make it a vegan dish. It's a matter of taste. For me. Everything tastes better with a butter. Also add about a teaspoon of brown sugar for some extra sweet taste. But this is also option. Baked. Our sweet enough. It's just that I have a bit of a sweet tooth. Then assemble the sliced beef ad spring of rosemary and rapid in aluminum foil. The aluminum will help keep the aromas trapped, giving us a stronger taste. The rosemary is very important in goes very well with the beads and will give an amazing famous, just wait and see. When the beet roots will start to cook, your kitchen will be filled with an unbelievable Rosemary aroma. And then go ahead and do the same with the rest of the beat drops. My kilogram of bits consists in just two megawatts. This is what was available for me in the market. If you can find medium-sized meets, that would be better. They would be easier to handle and to cook. If they are medium-sized, then you only have to cut them in half instead of thirds black. I had to do just don't buy if possible. Beads that are too small, like the size of small audience. You will then need like ten or 12 small ones to make a ketone. And that would be too tedious and time-consuming to come. Plus it would be hard to code them in oil and sugar and place the piece of butter inside them. Anyway. No matter the size of the beats. Washington Very well. Scrub them with an aluminum sponge and trim the edges. Remove any bad or uneven parts. Big the beads in a preheated oven at 180 degrees Celsius for 45 to 50 minutes or until the inside of the beads becomes relatively soft. If that's the first time you call the mates, that you should know that unlike baked or boiled potatoes, beets don't become flaking and crumbly one cooked. They remain relatively firm, but still very easily cut with a kitchen knife. While waiting for the beach to cool down. Prepare the tiny mixture. Start by crushing the garlic and the mortar, as I always say. And the pinch of salt to the garlic. It helps hold them in place while you crush them, and it also helps bring down their flesh. Then great dilemma. We need the zest of one medium lemon. And anyway, when the time comes and the zest, step-by-step, you can add more if you need to, but you can't remove them. If you added too much. Once the beet roots have cooled down a little, pill them and remove any burnt edges. I advise you to make more bits than you need. Keep some for later. You can eat them as a solid with a Lemon Mustard addressing a honey mustard dressing about summing vinegar dressing or simply with olive oil, lemon juice, and crushed garlic. Then cut them into pieces so that they can fit in the food processor. Then place the beetroot pieces in the food processor and mince them on high-speed, convinces them several time on short burst until they become minced. I like mixing them in short bursts because the blades can become hot and burn the full geoprocessing scraped the edges of the bone and add the tiny based. You'll notice the beads turning into a think. Now it's time to add the rest of the ingredients. Lemon zest, crushed garlic. Solving linear. And don't forget to season with salt and pepper for a creamy or taste, and uses some olive oil, not too much around two or three tablespoons. What nowadays the homeless and corrected or adapted according to test. Does it need more salt? Does it need more pepper, or does it need more acidity? These ingredients, especially the season, cannot be determined and equivalent class in a fixed absolute quantity. And in advance, like you would do on begging you take, It depends to a certain measure on your taste. All I can tell you is what ingredients and seasonings I'm adding. Just don't go overboard with any seasonings or condiments. And keep this thing and adapting wonder bead. It's July in taste and texture. Serve it and a platter or both. The same way we did with the tradition of humps. Plays in the back of this bone, likely on the depth and rotate the MOOC. However, unlike traditional homos, I will not go into shit. Neither will the olive oil nor with pomegranate seeds, because neither of them goes well of the Metro, Thomas, I simply decorate with some basil leaves. You can substitute the basin with mint leaves if you like. Service called an Enjoy. 15. Lesson 14- Peanut Butter Hummus : Hello and welcome back to another homos recipe. This new one is a variation of the original recipe. Please refer to the first homos lesson to learn how to cook the chickpeas. The traditional way of preparing homos involves the hiney based. However, and depending on where you live, it might be hard to get your hands on a good Tiny based, or even it might be almost impossible. So what to do in this case? Well, the solution is easy. Use creamy peanut butter. I know it sounds weird, but trust me on this. It's as good and tasty, if not even better, than homocysteine and paste. So here are the ingredients. For a 100 grams of cooked chickpeas. A bit of the chickpeas water. Two tablespoons of creamy peanut butter, garlic cloves, olive oil. The juice of half a lemon, salt. Paprika, and giant chiefs. Start by painting and crushing the garlic. Garlic based not on the app to add some salt. As usual. I'm using 20 garlic close, but you can use as much as you want, less or more than that. Then place the chickpeas garlic paste, about three or four tablespoons of the cooking water, and lemon juice into the food processor, and the chickpeas into a pasty consistency. If you don't want to go through the trouble of cooking the chickpeas yourself, then you can easily use a can of cooked chickpeas. Then add the peanut butter and process the mixture again. Make sure to use creamy peanut butter and not the crunchy type. Then drizzle, some olive oil, give the homos creamy texture. I'm adding maybe a quarter of a cup. Season was solved. Days the homeless, in order to check if it needs more lemon, more salt or even more peanut butter. You can also add some hot sauce. If you want to. Then place the homos in a small ball or platter. As usual, place the back of the spoon lightly on top of the homos and rotate the ball in order to make a sort of a trench that can hold the olive oil. Then garnish with paprika, dry chives and olive oil, and decorate the ball however you want. I'm using fresh basically leaves, serve and enjoyed with pita bread or as a dip was chips or credited. 16. Lesson 15- Pesto Hummus: Hello and welcome back to yet another original homos recipe. Today we will join again Lebanese and Italian font, and we're prepared a pesto homeless. Vesto is an Italian source, main with basal garlic, olive oil by knots, and Parmesan or Pecorino cheese or sometimes both. Some people like to add lemon juice or lemon zest good. So we are going to make our pesto homos based on the recipes of both depths with a few modifications. Here are the ingredients for a 100 grams of cooked chickpeas. Some of them boiling water. Half a cup of the Heaney based about two cups of fresh basil. One big garlic clove, or two smaller ones. Half a cup of grated Parmesan, a handful of walnuts or pine nuts or any kind you like. Lemon juice, lemon zest of one lemon. Olive oil. Unsolved. Start as usual by peening and dicing the garlic until small, thin pieces to help crush it and don't forget to add some salt. Then just squeeze the lemon. Always start by adjusting the lemon. If you squeeze at first and becomes very hard to sustain it afterwards. We'll be looking for this recipe for a stronger acidic taste than we usually do when preparing the homeless. Lemon juice and zesty taste. Very good were the basis. Then go ahead and put your cooked chickpeas and some of their cooking water and the food processor and bloods them for a few seconds. Start by putting two to three tablespoons of water. And if they seem too dry, then add a bit more than two. Two. When the chickpeas are well processed at the tiny based and mix all together for having half a minute or so. And then go ahead and add your lemon juice. You can do this while mixing. When the chickpeas Antonioni mixture has been well processed and has reached the desired texture. At the basil leaves. Don't add them from the beginning. It's better to avoid processing the basil too much. Basil leaves are fragile and the blades of the food processor can burn them as they become hot. So process the mixture and just for a few seconds to make some space and then add your crushing garlic and olive oil. Mr. As for the best TO as traditionally made with pine nuts. But it's not actually necessary. I've tried it with all kinds of nuts and they all work very well. I'm using walnuts for this recipe because they go wonderfully well with both chickpeas and buzzy crushed and that's a bit before adding them to the food processor. It makes it easier for everything to be well incorporated. Give it a mix for a few seconds, and then go ahead and add the grated Parmesan. You can also use Pecorino cheese instead. A little bit of both. Don't forget in the end to add your lemon zest and to season was plenty of soft. Mixed everything and give it a taste. For me, it needs more lemon juice and soft. So once the almost ready, in whatever way you like I do, it's as usual in a book. Then I go back with my spoon likely and create a space in a minute. I'm adding some public spicy oil on top and I'll decorate, well the spring of message. Enjoy it. 17. We might add a bit more lemon than usual. Lemon juice goes well with avocado and it will keep it from going brown. Cut the avocado in half, make sure that it's right. Then pitted. And using a spawn, take the flesh out. As you can see, this one is ripe enough that I don't need a knife to get a bit OPT. And I can easily spoon the flesh out. But the chickpeas and the food processor for the bit of the cooking water, about two or three tablespoons, then process them into extra. This needed a bit more water. Keep processing for about a minute or so, and then add the avocado pieces, the cilantro and the minced garlic, and back to the processor for another minute. The mixture should turn green and then add the lemon juice. And the juice of around half a lemon. We'll add more. And then go ahead and add a fourth of a cup of extra virgin olive oil. Then season with salt and pepper to taste. And taste that in order to adjust it in case it needs more salt. As you can see, I'm adding a little bit more lemon juice, a bit more salt and oil. I'm adding oil to make it a bit creamy and smooth. Once you are satisfied with the taste, it's time to plate. As usual, use a small bulk, spawned the depth, and then place the back of this corn lightly on the lip and rotate the ball in order to create a trans, in which you can use some olive oil.
