If the answer is yes, you are in the right place because your teacher meeting me is from the region in Italy, familiar Romania, where Italian traditional lasagna and its most important ingredient, Balinese Assoc, were invented more over. I come from three generations of lasagna makers, My great grandmother's past the own recipe to my grandmother's that it got to my mother and to me in the following videos, and you will learn how to make Italian traditional lasagna. Based on my family recipe, I will start by making fresh pasta from scratch. I will also give you a few hints on how to needed your pastor and raw your past. But if you don't have time to prepare fresh faster today, I know that you can buy lasagna sheets in the store. Then you alert how to prepare Best amount SOS and Bolognese. Esos bowling is Assoc is the masterpiece of Italian culinary tradition. You can have it in Silas Sonya, but also with other fresh, faster or dry past. Um, as a class project, I will ask you to prepare your own Italian traditional lasagna or, if you prefer, a past a dish with volunteers, the cells. If you can't wait to learn all about it, collect on general bottom and started journey with me into the heart of Italian culinary tradition. 2. Bolognese Sauce: thank you very much for a rolling in my class. As I told your bonus, Assoc is the masterpiece of Italian Comin out of tradition. It's round and meaty taste. Mary's perfectly with the pasta dishes we love the most in Italy, in every grandmother's house, there's a pot of simmering Balinese Esso's they usually prepared on Sunday and then keep it for the next day's to make many different past the dishes. It's great with dry past of fresh faster but inside lasagna mixed with betterment. SOS is the absolute perfection. The ingredients of bowling is. The souls are. It's a frito made with one carrot, one salary and one white onion. Then we have the meat to answers bacon, two small sausages or a big one. £1 of groundies 10 answers off tomato sauce. Oil, basil insult. We will start by making this a free CTA. Let me explain to you the importance off sofrito, which is a mix off carrots, celery and onion cut into little cubes. That's what I'm doing right now. Sofrito is used in a lot of Italian recipes to enhance the flavor off sauces or off meat. Let me tell you a little secret in Italy, we have boxes off frozen, so freaked out. Then you can keep in the freezer and use for all your rest. Peace. What you can do, if in your countries, even have that is to cut more carrots, celery and onion, and then keep it in the freezer so you can use them whenever you want. Sofrito literally means lightly fried, so what you have to do is to warm the oil and fry very lightly in the oil. The vegetable cubes for 3 to 5 minutes. Once you will end, a meat there will give a fables flavor to the sauce. Remove the skin off the sausage before an in it, and once you have it inside off the thought, break it into little pieces at also the bacon. And the ground beef makes very, very well all the meats together and make them cook until they relieve their juices. Then it's time for the tomato sauce. Have your bowling is a Sosa's simmer for an hour and 1/2 covered with a late. I know that it sounds like a long time, but the nice thing about it is that you just have to check it once in a while. The most important thing that you have to check is if the bowling is associates to dry, then you can add a little bit of water. When you're bowling Is associates cooked? Add fresh basil. This is the consistency of the perfect. Bowling is a SOS. And I'm sure that if you followed all my instructions, your source will look exactly like this. In the next video, I will teach you how to need to your own fresh faster. 3. Make&Knead Fresh Green Pasta: it's time to learn how to make and need your own fresh faster. If you don't have time to do it, don't worry about it. You can go to the store by lasagna sheets. They come in a box, bothered them into soldier water, and you're ready to assemble your lasagna. If you have time to learn with me today, how to make your own fresh faster. You also learn the fresh pastor comes in different colors. You can prepare it white, green with spinach rat with tomato orange with carrot black. Maybe I tell you all about it in one of the next classes here in scale share today for Italian traditional lasagna, we're going to prepare green fresh faster. Here are the ingredients for two big pants off lasagna. First of all, I will tell you one secret that comes from my family recipe instead of using Onley Oprah Please flower. I'm also using durum wheat flour because he helps the pastor. To retain the SOS. Better use two and 1/4 cups off old corpse flower health. A cup of durum wheat flour, three X five ounces of spinach. They will give the collar to the pastor before mixing the spinach with the rest of the region's, I cooked them inside a pot with a little water for 5 to 10 minutes. Then I squeezed them from the water very, very well, and I chopped him in a mixer at home. You have a machine that helps you need the dog. Use it. You just need to throw everything inside a machine and let it do its magic. But go to the end of the video because I give you a special hand that it's really important . If you don't have a machine, watch me and I'll show you what I've learned from my mom and my grandmother's. Make a hole inside of old workers flower at the Durham wheat flour, the eggs and the spinach. This is the part where your hands get very, very dirty. Keep putting together old ingredients and in a few minutes, don't worry. Won't take too long. You will have your dog if in the meantime you will feel that the dog is too wet at a little bit of flour. If you feel that it's too dry at some water room temperature after five minutes and you will reach the perfect dark consistency at this time, you have to start needing for 10 minutes to set the timer. Needing the dog is like going to the gym. You have to use your whole body. Use your hips, your folders and your hands off your hands. You have to use the bottom part, the one close to the wrist. I will show you two different ways off needing the dog. The first way is using one hand after the other. Push it with the whole body, push it with your whole weight. The second way of needing is with both hands. Use both hand boasts both the wrists, then fold it and start needing again. After 10 minutes of this, you can make a bowl with your dough rapid and save it in a Tupperware. It's very important to wrap the door before let it rest because otherwise it creates a crust on top of it and makes it almost impossible to roll it so rapid. Living inside the tougher word for 30 minutes. And then I'll see you in the next video, and I'll teach you all the secrets to roll your own lives on your sheet. 4. Rolling Lasagna Sheets: many years ago, our grandmothers used rolling pins to roll the dough and to cut it into lasagna sheets or Tala Tala Tala lini. They used the knives or rollers. Luckily, technology brought us machines that help us do the same exact thing easier and faster. So if you intend on making a lot of fresh fasten to your house, you should buy one off them. This is the machine I'm using to make lasagna. As you can see, it has three different roles on its for lasagna. One is for Tenuta. Let wanted for totally There are smaller here. You can decide how big the pastor needs to go through the role. So 1231 is the biggest is the thickest, and then it gets smaller and smaller. I'll show you how it works, and I block it on the table with this, and I will roll the pastor with this. The first rule about rolling your own pastor is to keep a bowl off flower next to you. You have to flower the entire table and then keep flowering. The pastor while you're rolling it. Unless it was stick to the role. Remember that I put everything inside Tepper were, and I wrapped my faster portion apart off the dough and keep the rest of the dough inside a tougher work with flour and then work it with your hands. I told you before that every machine has a knob with different numbers. The lowest number, usually zero or one, is for the sickest. So you have to roll your past up five times inside the thickest role and keep folding me one time after the other. Once you rolled it five times, you can start run it in higher numbers and then you make it last sick. My grandmother used to say that right thickness for lasagna is in the middle. So if your numbers go from 1 to 8 like mine, you have to stop at four. If the sheet is too long, you cannot manage it. Don't worry about it. Just cut it into two house and then roll it. One house at the time back home holding it. I'm holding it on the back of my hand. It makes it much easier to roll it and then you roll it. I'm on three now. Four would be my top. This is what I need you Put Mawr flower on it and you leave it aside, actually later. What to do with it? As I told you before, one of the most important rules is that the table where you leaving the sheets of lasagna needs to be flowered up. And then you need to spread the flower on top of the lasagna. Let me show you a very cool trick. Once you're rolled the entire door would you have to do is to take the pen you'll be using to assemble your lasagna and cut the lasagna sheets off the size of the pain. This is another secret that comes from my family. Never use fresh pasta without boiling it into salted water for a few minutes, then drain it. Put it under cold water because you will have to use your hands to live it to rest on a cloth. In the next video, I will teach you how to prepare on May devotional cells 5. Bechamel Sauce: best families of French source. But in Italy, especially my region, Emilia Romana, we use it a lot for our baked pastor recipes. Inside the lasagna The soft taste of National SOS combines perfectly with the round and meaty taste off bowling ism. Off course, you can buy bash melt in the store, but let me tell you one thing to prepare it at home. It's easy, fast and much less expensive, considering the ingredients you'll be using. Thing Wiggins are butter and flour in the same amount. Milk sold and not make in a pot. Mounts the butter, then start adding the flour a little bit at the time when the flower is perfectly incorporated in the butter, you can add warm milk whisk and keep adding warm milk till everything is mixed. Keep whisk until you have this consistency. At this point, you just have to bring it to boil, add salt and love money and let it rest. We're definitely ready to assemble our lasagna in the next video 6. 5 Layers of Goodness: Okay, now we're ready to assemble our lasagna. We have Bowling is a So's the simmered for release an hour and 1/2 bechamel sauce and boiled lasagna sheets. Remember to boil those on your sheets that you bought in the store, but also the ones that you prepared at home. Ideally, three layers should be fine, but if you want to prepare truly luxurious lasagna, you should make five layers. Greece depend with butter or whatever you prefer. Cover the bottom off the pen with lasagna sheets. A generous amount of bowling is the SOS and a generous amount off Mechem L. As you can see, I'm using two different spoons Now here comes second layer. Let's on your sheets. Bowling. Use the souls and Bush family. Third layer. What about 1/4? One for the 5th 1 Cover everything with us on your sheets on top, you will put Bowling is a so special Mel makes well, the two of them. And then, if you like grated Parmesan that comes from my region, bake in a preheated over at 350 foreign I degrees for 30 minutes and grill for five minutes before serving. You can add more partisan This it's what you get when you make five layers. Italian traditional lasagna have no more secrets for you. And I can't wait to see the results off your Balinese and and Lavinia making. So please share the pictures off everything you cooked in the class project section. 7. Conclusion: get out Cigarette. Socratic water. It means the things Withhold my heart for enrolling in my class it for getting this far as a class project.
