1. Introduction: Hey, guys, I'm So Dani, culinary educator, cookbook author, content creator, and full time entrepreneur. I get a lot of courses for you guys. We all need a good cup of caffeine to start our day. This course is all about fun. Come, guys, let's have some fun with coffee. I'm going to create some excellent recipes for you guys and some amazing deserts as well. If we talk about recipes in this course, we will be making some coffee mocktails, some coffee desserts, and some traditional coffee. At the end, I'm also going to teach you how to make a perfect shot of espresso and cold brew coffee. If we talk about ingredients and equipments in this course, nothing fancy, all basic, that are definitely available in your pantry. Come, guys, let's begin. 2. cafe shakerato: Guys, right now, we are making cafe Cecerato. A classic Italian cold coffee with very basic ingredients, Cecarato means just shaken. We will be making Checarato, but I'm going to add a twist of lemon into it. Come, Let's start the recipe. Let's add ice. Let's add a shot of espresso. I'm using double shot of espresso. It all depends what how strong caffeine do you need? What I'm adding is lemon to this. Lots of freshly squeezed lemon. Sweetness is definitely optional. If you guys have sweet tooth, you can add sugar, or else it's absolutely fine. Next, we're going to shake this till ice breaks, and you get good froth. Come let's shake this. Let's pour this. At the end, I'm going to garnish this with three coffee beans that represent health, wealth and happiness. And we are done. So this drink can be pretty good start of your day. You can use single shot of espresso or double shot of espresso. And also, you can mix this with a lot of variations. Like, you can add sweet cream to this, you can add vanilla assens. You can use some fresh spices. Cinnamon will go very good in Chkarato, as well as you can use some nutmeg to this. And also, if you have that flavor profile, you can add a little bit of sea salt to this. Try this out with your flavor profile that you love the most. 3. Espresso Tonic: Come, guys, now, let's make espressotonic, the most loved coffee mocktail ever. If we talk about espresotonic, history is amazing. There was a party in office. There was no drink left, only some tonic and left over coffee, and it's combined and rest is history. But we are making today with twist of zu in it. So Yu is basically Japanese lemon, very much available these days in market. In case fresh zu is not available. Definitely, syrups are available for sure, syrups or puri And if you talk about yz, it's very much used in yogurt and also in some salads and mocktail as well. We are giving a twist in our caffeine today. Come. Let's begin with recipe now. Let's add ice to our glass first. Now I'm adding osu syrup. Guy, this is pretty much strong. So this is a Yso syrup. I'm just adding it to my glass, and I'm going to pour some tonic water. Let's mix this well, and what you can smell is beautiful aroma of zu. Again, single shot or double shot, definitely, that's up to you. But let's give you a beautiful slow pore. Guys, If we talk about zu flavor profile, it has pretty strong flavors. Adjust and balance the taste accordingly, and every extract depends on the brand what you are using. Adjust and balance accordingly. But do try this guys. I in case, you can also try this with cafe lime. That's also very much available these days. Try that, you will love it. 4. Pomegranate coffee: Some coffee flavors are weird when we listen about them. Like right now we are making coograte coffee. Sounds weird, but trust me, you guys won't regret this. We are making coffee with pomegranate juice and a shot of espresso and nothing else. The main point while selecting a coffee, make sure you select a coffee that has fruity notes in it. Come Let's begin. Let's a ice first. Next, I'm adding some freshly squeezed pograate juice. Now I'm adding a shot of espresso to this, a single shot or double shot you can add if you need some strong kick of caffeine. And let's give this a stir. And we are good to go. Pretty smooth to drink and leave beautiful after taste. If you want, you can add a bit of tonic to this or maybe club soda, just to give a little bit of fizziness to this, and sweetener is not needed. Still, if you guy this sweet and your p is not sweet, add a little bit of simple syrup to this or sugar syrup. But try this guys, cheers. 5. Mazagran coffee: Now, let's make Mazagran. It's a Portuguese way of drinking coffee invente in a fortress called Mazagrn, in town Algeria. Guy, that's one of the most loved Portuguese coffee drink includes coffee. Some sweetener, we will be using brown sugar to this. Some mint, and Rm is optional. Some people add ice cubes to this and some people don't. But we will be making without rum and with ice. Perfect for your summer. Let's begin with the recipe. Come, Let's squeeze some fresh lemon to this. Next, I'm adding sugar. I'm using brown sugar. I'm adding two teaspoons of sugar. Let's mash this first. Add some mint. And I'm adding some shot of espresso. Single shot or double shot that definitely depends on you guys. Mx this well. L et's add ice. Now, guys, I'm adding tonic to this. That's completely optional. Go to garnish this with some orange wedge. And you are done. One thing that I strongly want to suggest you guys. Never replace fresh ingredients with syrups. Like the goodness of mint and freshness that you will feel in fresh mint, you won't get in syrups. If you have a party at your place, you can top this with vodka, gin, or rum as well. Do try this guys. It's beautiful drink for a hot refreshing day. 6. Lemonade Coffee: What do we guys need on a hot summer day or when we are tired or when we are dehydrated. We need lemonade, right. So right now, we are making lemonade along with caffeine. This will be refreshing, and we'll give you a kick of caffeine. Come, Let's begin this very simple two ingredients recipe. Radia can of lemonade. Let's pour this. Let's pour ice, and let's add single shot of dark roast espresso. At the end, I'm just going to garnish this with fresh orange wedge. And we are done. Guys, I use credmd lemonade can. That's with soda. You can use S per your choice. You can use fresh lemonade, tonic or club soda is optional S per U, and sweetener is also S per U. If you have a sweet tooth, add sweetener, or else it's cool, good to go. If you have a bitter taste profile, but try this on a sunny afternoon on a hot day, it will be refreshing and energetic at the same time. Try this guys. 7. Orange Coffe: Tras and coffee are one of the most loved combination. With that combination, we're going to make one very basic mocktail. That's with orange juice, tonic, and coffee. Come let's do this guys. I'm adding some ice cube first. Around 45 ML of orange juice. 40 to 50 M freshly brewed espresso, and around 100 ML tonic water. And one orange wedge for garnish, and your glass is good to go. In some recipes, I believe, perfect measurement is the key for a perfect glass. That's what I'm telling you, follow the exact measurement for this recipe, and you will get amazing results. Do try this guys, and also if you don't want to use a short of espresso to this, you can try using cold brew. Make sure double the amount of cold brew Then a short of espresso. Cold Brew recipe is also mentioned at the end of the course. So do watch that as well. 8. Cinnamon Coffee: Recently tried this coffee at one of the airports in Vietnam. Trust me, I just loved it. Right now we are making cinnamon coffee it's a combination of cinnamon sugar and espresso. If you want to spice up your coffee and you love taste of cinnamon, you will love this. Let's start this recipe. Come now, Let's add water to boil first. Next, I'm adding some cinnamon sticks. Make sure you use the fineness of the cinnamon. Next, I'm adding some brown sugar. What I'm making is around two cups of coffee. L et's the next. Now let's wait for water to boil and lets sugar melt and cinnamon flavor to infuse in water. Till then we'll wait. What we can see is sugar is melted and we can smell amazing cinnamon aroma. We'll just wait for a couple of minutes to cool this down, then we'll move ahead. Let's begin by adding ice. Next, we're adding the concoction that we've just made. Make sure once this is cool down. And what we can smell is beautiful aroma or cinnamon. Next, I'm going to pour this a shot of espresso, and let's give this a good mix. Garnish this with some fresh cinnamon. And our glass is good to go. This is one beautiful way to do your dose of caffeine. This smells amazing and looks beautiful. You should try this if you love flavor of fresh cinnamon. 9. Tangy Coffee: We have guests at your place. Let's make very interesting coffee for you guys, that you can serve in a beautiful way. Your guests will be impressed and tastes amazing. It's a bit of tangy and strong dose of caffeine. Come Let's start. Let's boil water first. Guys, once we can see water is boil. Let's turn off from the flame. I'm adding hibiscus t to this. There's fresh hibiscus and nothing else. That's caffeine free. No, let's wait for around three to 4 minutes. Once we can see tea is brewed. What you need to do is, take out your tea bag and let the water to cool down, and then we'll move ahead. Let's add ice first. If you have guests at your place, serve it like this. This looks beautiful. Serve like this to your guest and short of espresso. This looks beautiful. Let's give this a sir, and your drink is good to go. This coffee doesn't only look beautiful, smells amazing and leaves beautiful after taste. Beautiful after taste on your mouth. You can't afford to miss these guys. You can also use Blue instead of isc, but you need to try this and impress your guests. Do try this guys. L. 10. Spiced Coffee: Now let's make another spiced coffee. Again, with a very basic ingredients. I tried this on my trip to Turkey. Very simple recipe. Clean flavors, easy to make. Come, let's begin, guys. Let's begin by adding water. I'm adding some fresh tarnes. That's one of my favorite ingredients. Right now, this is two servings, add spice accordingly. Right now, guys that I'm using some instant coffee. You can definitely use a short of espresso. In case you are using short of espresso, add that directly to the glass. I'm adding sugar right now. I'm using brown sugar. Guys let sugar melt, and once you can smell aromas, take it off from the flame. If you guys are looking forward to drink this hot, this drink is ready to go, serve it and enjoy. If you guys want to drink this chill, let this cool down, and serve this in a glass on rocks of ice. Guys, right now, we are serving this hot in case you want this cold. Let this cool down and serve this on the rocks of ice. This is pretty strong and bold coffee. Guys, this smells beautiful, and these spices definitely have some magic. These adds magic to a glass. You can definitely add nutmeg to this as well if you want, and you will also add any other flavors that you want. These spices always enhance the flavors. Cheers, guys, do try this. 11. Vietnamese Coffee: Come now, let's make a coffee in Vietnamese way. Guys, if you know, Vietnamese people never add milk to their coffee. Either they add condensed milk or coconut milk or egg yolk. But we are making a coffee that's combination of coconut milk as well as condensed milk. This tradition in Vietnam started during the World War T. Shelf of condensed milk is very much higher than compared to regular milk. Since then, condensed milk started and rest is history. Come, Let's begin with a recipe now. Let's begin by adding ice. We need lots of ice for this. D. Next, I'm adding coconut milk to this. Around 100 m of coconut milk. And for sweetener, I'm adding condensed milk to this. Guys, when we are making this recipe, don't count calories, enjoy the flavor. Next, we're going to make a good slush out of this. Come now, Let's serve the slush. I'm a double shot of espresso. You can try the way you want and beautiful coffee is done. That's pretty simple guys. If you guys have a sweet tooth and also you need a strong cup of caffeine, try these guys. You won't regret. Freshness of coconut and strong. Amazing combination. Do try. 12. Spanish Latte: Guys, if we talk about latte, the basic ratio of coffee and milk is one third coffee and two third is milk. But right now we are making Spanish latte. That's ratio, one is to one, like one part of coffee and one part of milk. We are making Spanish latte, and for sweetness, again, in Spanish latte, we add condensed milk instead of regular sugar. Let's make this. There are different ways to make latte. We will just churn this in a mixture grinder, or else you can serve this in a glass as well. Come, let's begin. Right now I'm adding some double shot of espresso. For sweetener, I'm adding condensed milk. Definitely, this depends on your taste and some milk. That's full fat milk again. Equal amount of coffee. Next, I'm adding some ice. L et's churn this. Let's serve this. And we are good to go. This was so easy, guys, so easy. If you need a hot version for this, try this without ice, one part of hot espresso, one part of full fat milk, and some condensed milk for sweetener. That's it, and you're good to go in the hot version as well. 13. Nutella Frappe: Do you guys the single ingredient elevate the flavor of your drink? Right now, we are making uta frappe or you can call Nuta cold coffee. But we are using sea salt to that. Trust me, that will elevate your flavor. Come Let's begin with the recipe, guys. Let's add some milk and a spoon of neuta. Next, I'm adding a shot of espresso. And lots of ice. Let's churn this. D. That's one of the most important ingredients for this recipe. That's sea salt. Let's add generous of salt. Let's serve this. Guys, one important tip, not just about this recipe. Overall, I'm telling you add bit of salt to everything that sweet. Bit of to everything that salty. That's going to elevate your flavor, and that's your tip for the day. Do try this in any recipe. Maybe you can use salted caramel coffee, salted bisco, that salted util, or maybe sea salt and dark chocolate. It's again a beautiful combination. You can try that well, not just in coffee, maybe in chocolate shake as well or maybe hot chocolate as well. But do try these guys and enjoy. 14. Coffee Cloud: Now, let's make another recipe. Trust me, you will love it. Not a drink. It's a desert, and we call it coffee cloud. Come. Let's start. Let's begin by adding some ice. Next, I'm adding sugar, around two a half **** of sugar, and 2.5 spoon of coffee powder. And a little bit of cold water. Just a bit, not much. That's it. Next, we're going to churn this. Guys, this will definitely take some time. So He patients about it. See Once we can see a good creamy texture, I'm adding cocoa powder to this around two spoon. And let's churn this again. At the end, I will just finish with this with some cocoa dust. Guys, if you are coffee freak like the way I am, I'm sure you can't miss the dessert at all. Strong in taste, sweet, and give a perfect caffeine and cocoa powder to complete the desert. Trust me guys, very easy to make and beautiful frothy texture. Do try this and enjoy. 15. Cold brew: Guys, let's move to the new method of brewing, that's cold brew. Cold Brew method is also known as steep slowing brewing method, and generally, its brewing time is around say 12 hours to 20 hours, depends on the type of brewing you want. Guys, we will be using two equipments, one is French press, and one is Cold Brew jar. Guys, let's do this. Guys, what I'm using is. One part of coffee to ten parts of water. So guys, this is a 500 ML of jar. So I will be using around 50 grams of grinded coffee. So guys, if we talk about co brew method, it is always less in acidic. It's a slow brewing method and being enjoyed by many these days. So this is 50 grams of coffee to the French press. Now I will be adding around 500 ML water to this. In the next step, we're just going to mix this well and keep this overnight in refrigerator. And during morning, we just going to plunge this and enjoy our coffee. So next I'm using is Colbre filter. So guys, the best part about this is this portion, the net. This is very thin. And in this method, at the end of the cup, what we'll find is a little bit of coffee granules. And I really don't enjoy this. So this is one filter that you need for your Coldbre cup of coffee. So I'm adding 100 grams of coffee to this right now. Next, I will be adding one liter of water to this. Guys, I've used 100 grams of coffee in this filter. That's one liter of water. Let's close this and refrigerate for a couple of hours and our coffee will be done. So guys, in case, you don't have French press or this filter. All you can do is add coffee and water and filter using a thin mash clothe and your coffee will be done. So next morning, all you can do is add coffee with some tonic water, either you can blend it with ice cream or any other, well just enjoy this on the rocks of ice. And you will srely enjoy this guys. Cheers. 16. Moka pot / shot of espresso: Guys, now let's use Mocha pot. That's one of the most used coffee growing method. Guys, if you need a shot of espresso, it's not important for you to have a big coffee machine. This works wonder and available normal everywhere at a very nominal price. Guys, now let's move ahead and let's get a best shot of espresso. All we need is a mocha pot, some grinded coffee and water. Guys now let's add water to this. This is not boiling hot water, but pretty hot. This is the point where we should add water. Step number two. Now let's add coffee to this. Guys make sure the coffee should not be completely finely grounded. A little coarse. Let's fill this, and at the end, all we need to do is just let's flat the surface using our fingers. Awesome. Let's place the filter. Close this smoker pot. Pretty hot. Guys, now let's keep this boiling, and let it boil for two to 3 minutes. So guys are short of espresso is done. The way it should be, so you don't need any expensive or big gadgets for this. This works wonder. So guys, if you want to make cappuccino, latte, afagao, macchiato or anything else, this works wonder. Cheers and do try this. 17. Closure: So guys, we saw lots of recipes here. Lots of recipes, some mocktail, some coffee, drink, some hot drink as well, and a dessert as well.
