1. Coffee Course Intro: Hey there I'm sub, cloy educator, cookbook author, full time entrepreneur, and I'm passionate cook. And I love to create courses for Skillshare. And in this course, brew and blend, I've got variety of coffees for you guys. There are many mocktails, some recipes with milk, and also we have smoothie, as well. That's a good meal for your breakfast. All basic ingredients for you guys and simple methods so that you can brew at home. You're going to learn how to balance flavors and create different varieties of coffee as well. Come, guys, let's learn this happy. 2. Honey cinnamon coffee: Okay, let's make a coffee with notes of honey and cinnamon. Honey and cinnamon goes amazing together, and it pads beautifully with coffee as well. Come, let's make a very basic recipe. Combination of only three ingredients, honey, cinnamon and coffee. Let's begin guys with the recipe. Come. Let's do this. Let's begin by adding honey. Quantity of honey definitely depends on your taste. I would prefer not more than one tablespoon. That's more than enough, actually. This is done. Next I'm adding some cinnamon powder. Prefer to use freshly grinded cinnamon. Next, I'm adding a shot of espresso. I'm using double shot. It's up to you. Next, we're going to mix this well using a frother. The reason being honey, cinnamon and coffee should blend together well. I'm just using a frother, a very basic one. So this would help to combine all the three flavors together. You definitely need a froth, cinnamon to bind well with your drink. So, guys, once this is done, let's pour some rocks of ice to this. Or also you can try this warm, but I would prefer try this on rocks of ice. Let's add a rock of ice. Done. Pretty much easy to make a good frothy cup of iced coffee. You will love it for sure. Very basic ingredients and easy to make. Do try this, guys. Have fun cheers. 3. Coffee smoothie: We always say eat breakfast like a. A good start of the day makes your day good. And also, you need a kick of caffeine to start your day. So, guys, let's make a smoothie with a kick of caffeine, healthy and we'll give a good start of the day. Come, let's begin with the recipe, guys. What I'm using is some frozen bananas. Next, a handful of nuts that's cashew and almonds. Next, I'm using some dates for sweetener. We can avoid definitely refined sugar for this. Next I'm adding some milk. Maybe one fourth of the cup. That's it. Next I'm adding a shot of espresso, single shot, and time to churn this. Let's serve these guys beautiful texture, and it's done. That's it, guys. No gilt meal. A good start of your day and we'll give you caffeine kick as well. Have fun. Do try. 4. COCONUT CO: Hey, guys, we are making coconut coffee now. Not the regular one, one with pretty much different flavor notes. These are nutty flavors and also a bit of smoky notes as well. Come, let's begin with the recipe, guys. Guys, before we begin, make sure pan should be on medium heat at all times and stir this continuously. So what we're going to do is we're going to dry roast some coconut. I'm going to add some coconut on a medium heat temperature and keep this stirring. If we won't stir this coconut will get burnt, actually. This is very important step. Keep stirring unless coconut turns a little bit of red. So once this will start changing the color, we'll proceed to another step. So see, guys, we can see coconut started turning red. We'll do this for a couple of more seconds, and then we'll add room temperature water to this. So once it's turn red, I'm switching of the flame and I'm going to add water to this. So one bowl of grated coconut and around 400 mel water. Now, what we're going to do is, we're going to keep it for rest till the water comes down to the room temperature. I'm just going to cover this and let it rest for around maybe 15 minutes. Let this cool down and then we'll proceed with another step. Now, let's train this. I'm using muslin cloth for this. Also, if you have a proper mash, you can use that as well. Even if you don't have a regular mash, all you will get is a little bit of coconut particles in your mouth. Come, let's strain this. So once this is done, strain it properly, use double strainer. Oh, we don't need any coconut particles into this, or else coffee won't be good on your palate. Come, let's move ahead. I'm using a big rock of ice. The best part about big rock is it melts slowly, doesn't dilute your coffee faster. Or maybe in that case, any beverage. I'm using the coconut water that we just made. And next I'm adding a shot of espresso, maybe single shot or double shot the way you want. And you are good to go. Let's give you a good stir. And this is done. Smoky, nutty and use a good kick of caffeine. You will love it, guys. Sugar is definitely optional. You can use brown sugar syrup if you want. This will pair very good with this in case if you need sweetener, or I would prefer this is good the way it is. Do try this, guys. 5. Iced jaggery latte: Let's make ice caramel latte. Two ways. Pretty much easy to make and very basic ingredients, some caramel sauce, one veal making sea salt and one classic ice caramel latte. Come, let's begin with the recipe, guys. Let's do this. Let me add some caramel syrup first. Esparo taste. Next, I'm adding some milk. And a shot of espresso. Next, we're going to give this a good mix using a hand froth. Once we can see caramel sauce, coffee and milk is dissolved well, we can add rocks of ice in case you need a good frothy cup for some more time, but I would prefer the way it is, we're going to add some rocks of ice to this, and our coffee will be done. Now, J, I'm going to add a big rock of ice to my glass. And again, if we want, we can just garnish our glass with a little bit of caramel sauce on the side. So as caramel and salt are beautiful combination. They go amazingly well together. And what I'm using is a rock of salt. I'm just going to grate a little bit on my cup, and next we're going to stir this well and it's done. Let's mix this well. That's it, guys, pretty much easy to go. Caramel and salt is amazing combination together. In case if you don't want salt in your coffee, avoid just drink iced caramel latte. You will love it. Have fun, guys cheers. 6. Coconut Coffee Float: Now let's make coconut coffee float. I tried this coffee while I was traveling to Thailand, and I got this for you. So ingredients that we're using is some fresh coconut water. Try to use fresh. Then I'm using a strong shot of espresso, some sugar and ice cubes and nothing else needed. Let's begin with a very interesting recipe, guys. Pretty much refreshing, as well. Come, let's begin. Let's start by adding some instant coffee. Next, I'm adding sugar. You can definitely add brown sugar as well. Next, we're going to add some warm water to this. Not boiling hot, nor cold just warm. Now, let's whisk this for a couple of minutes. Make sure that sugar should melt and let's add air to this. This is a bit tiring, but trust me, this is worth doing it. So guys whisk this till we get pretty much smooth texture, and sugar is pretty much melted into this coffee. Come now, let's move ahead with another step. Guys, make sure that you add fresh coconut water to your coffee. In fact, any recipe you make fresh ingredient, definitely add that crisp to your food. Now, let's add coconut water. Done. Now, let's add ice cube. And next we're going to add coffee to this. That we have just whisk. Let's stir this. Pretty much simple recipe to make, and I'll make sure about one thing to simplify all the recipes for you guys. So, guys, don't forget and try this recipe. Pretty much refreshing to give a morning kick. Adjust coffee as per the way you want one spoon of coffee, two spoon of coffee or a short of espresso. All depends on you, but make sure you try this. 7. Cinnamon Shaken Cafe: Right now we are making cinnamon, ice, shake and coffee. That will smell amazing, and it's pretty much refreshing as well. Pretty much easy to make. Come, let's begin, guys. Let's begin by adding some cinnamon. Let me add some brown sugar. Let's mix this. We're gonna wait till sugar melts and we'll get beautiful aroma of cinnamon to this. Okay, done. So once sugar melts, and we'll get aroma of cinnamon, let this water cool down and wait for a couple of minutes. Let me add some ice cube, a shot of espresso and a cinnamon and brown sugar concoction that we just made. Next, we're going to give you a good shake. Give this a shake, the ice breaks, and we get a good froth. Let's give us a beautiful pour. Okay. And we are done. That's pretty much refreshing coffee, easy to make and smells so good. In case you need a little bit of fizzy effect, add some tonic water, ginger ale or a little bit of club soda. And you can also add a little bit of lemon to this in case you need. Cheers, guys. 8. Vietnamese coffee (1): Right now we are making is Vietnamese coffee, but with a twist. So normally Vietnamese coffee is made of condensed milk and coffee. But what we are doing is we are making caramelized Vietnamese coffee. So we have caramelized the condensed milk. So that's a pretty much lengthy procedure for that. But you will love the flavor. Come, let's begin with the recipe. So, guys, what I'm doing is this is entire can of condensed milk. I'm just going to dip in water, make sure that can is properly immersed in water. And we're going to boil this at a medium hot temperature. No boiling hot, medium hot right. And this will take around 75 to 90 minutes. Cover this well, and after every 15 to 20 minutes, add little bit of water to this. Right? Once this is done, next step we're going to do is next we just go to clean this can and keep this like this for say around 40 to 50 minutes. Never ever try to open the can when it's hot, right? So we are making two versions of this. One is hot and one is cold. So let me just open the can for you guys. All you can say this is caramelized beautifully, and this tastes like actually toffee as well. So what I'm using is traditional Vietnamese filter. In case you don't have one I would recommend you to get when it's available at a very dirt cheap price online. Or even if you don't want to use this, use a shot classic shot of espresso or maybe instant coffee with some hot water. Let's begin by adding some caramelized condensed milk a little bit more. Next, we'll add some ice to this. Let's add coffee to this around 18 to 20 grams. Give you a press. Let's add some boiling hot water. And cover this filter and wait for around two to 3 minutes. So once your coffee is done, remove the filter. And give it a good mix. Guys, you need to stir this well, because all we want is caramel condensed milk to get mixed very well with the coffee. This will take a couple of minutes. You can also use a milk frotha for this in case you need a hot cup, don't add ice to this, and your Vietnamese caramel hot coffee would be good to go. So, that's the beauty of Vietnamese coffee, strong robusta coffee, along with sweetness of condensed milk. And giving caramel flavor to the condensed milk is adding another beauty to this glass. Do try this guys cheese. 9. Mocha: Eps make mocha. Very classic drink, but let's do it my way. What I'm using is double shot of strong espresso and dark chocolate. That's I'm using 70% dark chocolate. You can use any chocolate of your choice. I like my caffeine to be strong and bitter. If you need your glass to bet on a sweeter note, all you can use is maybe some sweet chocolate or sweetener of your choice. Come, let's move ahead with the recipe. So what I'm taking is strong, bitter, dark chocolate. You can take chocolate of your choice. So this is 70% dark. Next, I'm going to pour hot coffee over this. In case you feel this is way too bitter, all you can do is add a little bit of sugar or any sweetener of your choice. In case you don't have hen frother, you can use blender as well. Give it a mix until chocolate completely melts in the coffee. Okay, and we're done with this. Next, I'm going to add hot milk to this. Let me add some hot milk to a glass. So that's a full fat milk. Again, we got to frotha milk. At the end, I'm just going to garnish with this, again, some pretty dark chocolate. That was my version of boca. Strong, bitter, and give a good kick of caffeine to start my day. Make sure you try this recipe, guys. 10. Honey Cinnamon coffee : We all love mocha right, but let's make today mocha with a twist. So we are making iced mocha with some orange zest and some sea salt. Come, guys, let's begin with a recipe. Quick, easy, and delicious. Come, let's begin. Let's begin by adding some cocoa powder. I'm using unsweetened cocoa powder around 1.5 spoon. Next I'm adding some sugar. As per your taste. I'm adding again, around 1.5 spoon. Next I'm adding 1.5 shot of espresso. That's dark roast. Now I'm adding something very interesting, a pinch of sea salt. Next I'm adding orange ristT give a tangy effect. Next I'm adding a little bit of warm water just to make the consistency better. Step next. Let's twist this well, so all the flavors should combine and come together. And even cocoa powder should melt well. Come, let's serve this. Let me add some rocks of ice. Now we're going to top this up with some boiled cold milk. So, guys, this glass of caffeine will give you a good kick of sweet, salty, and tangy at the same time, along with a good kick of caffeine. So do try this guys and Happy brew. 11. Peanut butter Affagato: All enjoy a facato, right? But let me give a twist today to your regular glass of a facato. So right now we are making peanut butter, a facato. You will love it, guys. It's crunchy and give you a good kick of caffeine. Come, let's begin with the recipe, guys. Let's begin by adding a spoon of peanut butter. So that's unsweetened peanut butter I'm using. You can also use crunchy peanut butter as well if you want. Next, I'm adding a double shot of freshly brewed espresso. And next che, let's mix this well. What we're going to do is we're going to apply peanut butter in the glass first. Once this is done, we're going to apply a little bit of peanut butter on the rim of the glass. Next, we're going to coat this glass with some roasted, salted peanuts. And this is done. This pretty much easy to do this, and it will give a beautiful crunchy effect in your dessert. Next, I'm going to double scoop of vanilla ice cream. And the coffee and the peanut butter mixture we just made. Guys, you got to try this if you love coffee and dessert both. This is sweet, salty, and again, we'll give you a good kick of caffeine and a beautiful dessert to serve as well. Do try this, guys. 12. Walnut caramel Affagato: Let's make walnut and caramel a fogato now. Easy recipe. You can add a pinch of salt to this. I have added walnut to this. You can add any nuts you want. Soft and smooth texture and crunchy effect with the nuts. You're gonna love it, guys. Come, let's begin with the recipe. Let's begin by adding some vanilla ice cream. Next, I'm adding some roasted walnuts and some caramel sauce. Awesome. Now, let's mix this well really quick. So once we go to mix walnuts and caramel to this, again, we're going to freeze this for a couple of more minutes. And after that, I'm going to add a shot of espresso. And that's done. So that was easy to make recipe quick, and you're gonna love it. If you love caramel, that's a good replacement of your dessert and also adds a kick of caffeine to your glass. 13. Pistachio Affagato : Let's make pistachio of aagato now. Quick and easy, and we're going to make pistachio butter first. Very easy to make with very basic ingredients. We're going to use some roasted pistachio neutral flavor oil. Maybe you can use coconut oil and optional sugar as well. And again, you can use that paste or maybe toast or any other dessert as well. And you're gonna love this guys. Come, let's begin with the recipe. Comes a some pistachio first. So that's roasted one. I'm going to add one spoon of sugar to this. So that's completely optional. Next, I'm adding a bit of coconut oil just for the smooth texture. You can use any neutral flavored oil. Next, we're going to grind this for around seven to 8 minutes. All we need is smooth paste, add oil, check texture, and keep adding oil accordingly. And I would suggest use coconut oil. That goes perfect with pistachio. Come, let's coat our glass with the pistachio butter we just made. Oh, that's smooth, silky, and looks delicious. So if it we quantity, that was around 75 grams of pistachio, two spoons of oil and around one spoon of sugar and nothing else. You can also use this paste on toast or any other dessert as well. We need to rim the glass as well. Come, let's coat our glass with some nuts. I'm adding double scoop of ice cream, along with double shot of dark roast coffee. And this is done. That's delicious and made in an authentic way, the way it's made. I'm sure you're gonna love it. No preservatives. Quick, healthy, and tasty. Make sure you try this guys. 14. Brownie Affagato: Let's make a beautiful dessert now. We're going to make brown ice cream of fagato. We're going to use chocolate brownie, again, with chocolate ice cream and a double shot of espresso and some nuts. Beautiful dessert, quick and you're gonna love it. Come, let's begin, guys. Let me add some chunks of brownie first. You can also add some crumble muffins, if you want. I'm going to derve some strong coffee on this on chunks of brownies. Little bit not much. So next we go to top this with some chocolate ice cream or chocolate gilato. Come. Let's add a big scoop of chocolate ice cream. And we're going to add some roasted nuts on this. Again, I'm going to add a little bit of coffee to this. Not much, maybe around half a shot. And this is done. This looks beautiful. Tastes delicious and easy to make. You got to try this if you have guests at home or you are hosting a party, or you can temper yourself with this. Do try this guys. Have fun and happy brewing, happy learning. 15.
