1. IntroDuction: Hey, guys, I'm Sam Danvani colery educator, cookbook author, and I create lots of courses for you guys. This course is all about dips, sauces, spreads. So you guys must be thinking, why do we need to learn this? These things are ready available in the packets, in the jars in the market. But do we really know what are the ingredients inside the jar? What we're going to make is all good ingredients, pretty much simple recipes, and no added preservatives or colors or any of such products. And all recipes are pretty much basic to use, and we're going to use all basic ingredients that are available in your pantry. Come, guys, let's begin happy learning. 2. 01 High Protein Yogurt Dip: So right now, what we are making is high protein yogurt dip, rich in taste, creamy textures, very easy to make, and very healthy ingredients. Trust me, you will love it. You can use this on your bread or with crisp and nachos or much more things. Come let's begin. What I'm using is some hunkerdO you can also use Greek yogurt as well. Anything is fine. Next, I'm using around two medium cloves of garlic. Next I'm adding some black pepper. This is freshly grinded and some regular salt. Salt, I'm using very less because we'll also be adding cheese to this. So very little salt, not much. So right now, I'm adding some seasoning, that's oregano and some dried herbs. So next I'm adding a small block of cottage cheese or paneer and some around 50 to 70 grams of cheese. So that's regular cheese. Come, let's give this a good mix. This is done, and this looks pretty much creamy and delicious. You look at the texture. So why texture is the key here. In case you don't get a creamy texture, adjust this with some more yogurt or maybe some more cottage cheese, depends. So let's serve this in a bowl. You can definitely adjust seasoning asparo taste. So what I have used is some mixed herbs, that's combination of oregano, basil, and thyme. You can add rosemary as well or maybe some fresh parsley. So right now, I'm using this on crispy, regular bread. That was pretty much simple, high in protein, and Trust me guide tastes delicious, very much easy to make. And after trying this, I'm sure you won't love that packet sauce. Do try this, guys. 3. 09 tzatziki: Let's make taziki now. So that's basically a Greek yogurt or say Greek Greek sauce. That's a combination of yogurt, some grated cucumber, some lemon, herb, salt, and very basic ingredients. Quick to go and very tasty. Come, let's begin with the recipe. So let's grate cucumber first, along with skin. Let's drain all the water from the cucumber first. Let's add cucumber, water to be strained, around half a cup of yogurt, thick yogurt, water to be strained again from this as well to get the perfect creamy texture. Next, I'm going to grate single clove of garlic to this. Let's squeeze some lemon. A little bit of salt and some pepper, freshly grinded, and some fresh parsley or any herbs of your choice. Let's give you a whiff. I'll have a little bit of more yogurt to this. Adjust this as per the consistency. Adjust flavor accordingly. I'm just adding more of lemon juice to this. And this is done. At the end, I'm just going to drizzle a little bit of olive oil to this. Sometimes things looks difficult, but they are very easy to do. Guys, this shows cafe like sauces and dips can be make at home in minutes. 4. 08 Garlic Oil: We're making is garlic oil. You can store this in a jar and instantly, you can just drizzle this on a bread and grab and go. Come, let's begin with the recipe. Let's begin by chopping some garlic. Let's have a little bit of olive oil or any other neutral flavor oil. So let's toss garlic on medium flame. Make sure we don't have to cook garlic, toss it for a couple of seconds. That's it. Once you see it started to getting grown, let's stop this and let's take this off from the pan. Let's add that roasted garlic in a bowl. Let's add some more extra virgin olive oil, some salt, black pepper, chili flakes and some dried herbs or maybe fresh herbs. Let's grate some lemon zest to this. Let's mix this well. Let's keep this for a couple of hours before you serve. Maybe say around minimum five to 6 hours. The flavors of garlic will infuse well in oil and then splash this on a bread, and you are good to go. 5. 04 Salsa: Right now we are making salsa. That's quick, easy, very much common, but very comfort paired with anything that you want. Very easy to make. Ingredients are very basic. So tomatoes, onions, bell peppers, cilentro, lemon juice, alapinos. If you don't have laa pinos, use green chilies. Come, let's begin, guys. Let's begin by adding some onions. So tomatoes. So bell peppers. I'm using some fresh cilantro, along with stems. Some alpinos. You can also use green chilies if you want. A little bit of salt, some black pepper, some grounded cumin. Let's squeeze our lemon here. Let's give this a quick mix. And let's keep this aside for a couple of minutes so that flavors can come together of spices and lemon. I paired this with lavage, pretty much comfort dish, serve this to your guests. They will love it, and you can serve this as appetizer as well. Do try this, guys. 6. 03 Roasted Bell Pepper Dip: Right now we are making roasted bell pepper dip. So that will give you a pretty much smoky flavor. So I'm roasting this on open flame. In case you don't do that, bake this in oven as well. Come, let's begin with the recipe. Once you have peel this off, let's add all the ingredients to a mixing jar. Let's add smoke green chilies and some smoked garlic, and smoked bell pepper. A little bit of yogurt for the consistency. So freshly grand black pepper, bit of salt, and some extra virgin olive oil. Come, let's add some cheese, as well. Let's grind this. Come, let's serve this now. And this smells beautiful. You know, you are getting the perfect aroma smokiness. Pair this with a stick of lavage or maybe cucumber or carrot. And you will enjoy this. Cheers. 7. 06 Pineapple Salsa: Let's make pineapple salsa now. Sweet, tangy, and spicy. Pretty much interesting. Let's do this, guys. A adding some bell peppers. Next I'm adding some pineapple chunks. Pineapple chunks are not finely chopped. They're pretty much big in size. Next I'm adding some tomatoes, finely chopped. The pulp has been removed. Onion, little bit, very little quantity of onion. Next, I'm adding some cilantro along with stems and some alpinos. Guys, the quantity of alpino should be pretty much more. The reason being pineapple is on a sweeter side. Next I'm adding lemon juice. The quantity of lemon juice should be pretty much less because there's already tangy flavor in pineapple. Next I'm adding salt, some cumine powder. And black pepper, mix this well and before you serve, let it rest. So the excess of water is released in the same bowl. After five to 7 minutes, serve this. This was pretty much easy to do. You can also serve this on a crisp bread, and you will love it, guys. Make sure you try this and serve this during party at your place. Everyone will love it. 8. 05 Dragon Fruit Salsa: Hey, now let's make dragon foot salsa. Sounds weird, but trust me, you will love it. That's combination of sweet and very spicy. Come, let's begin with the recipe now. Let's begin by adding some tomatoes. Guys, these are de seeded tomatoes. Pulp has been taken out from the tomatoes. Now next I'm adding some dragon fruit. And some fresh cilantro, along with stems, some extra alpino because dragon food is pretty much sweet. Let's squeeze some lemon juice, a little bit of salt, some black pepper, and some cumin. Let's give this a good mix. And let's keep this aside for five to 10 minutes so that flavor can come together. So that was my version of salsa. Sweet, spicy, and tangy. Do try this, guys. You will love it. 9. 02 Sizzling Yogurt Dip: Right now we are making sizzling yogurt dip. That's bit on spicy side, but you can adjust spice notes according to your taste. And this pad is very good with crip and nachos. Come, let's begin with the recipe. I'm adding some garlic, onions. And that some sesame seeds to give the perfect crunchy texture. A little bit of black pepper, a little bit of salt, some seasoning of your choice, and some chili flakes. Let's give a mix. I just pour some fizzling hot oil. I'm just going to mix this well and cover this for around a minute or two. And this is done. This smells amazing. Let's serve this now. What I'm using is some thick yogurt. Serve this. Serve this with crisp chips, nachos, and doritos and everyone will love this in your party. Do try this, guys. 10. 07 French Onion Dip: Hey, let's make French onion dip now. Pretty much easy to make beautiful aroma, good texture, and pairs with everything you want. Come, let's begin with the recipe. Let's begin by adding some olive oil. Quantity of oil should be very less, just for the greasiness, nothing else, and make sure the oil should be neutral taste. Oil is on medium hot temperature. A pinch of salt and a little bit of seasoning. So make sure we don't need to cook onion completely. We're just going to cook this until it becomes translucent. Maybe it will take not more than three to 4 minutes max. One medium flam. I'm adding some Greek yogurt. A little bit of salt to this. So I'm using very small clove of garlic. I'm just going to grate this single clove. So next I'm going to squeeze some lemon to this. And next I'm adding very little lemons rest to our dip, just to give the tanginess. And next I'm adding some roasted onions. Let's whiff this Keep doing this until you get a pretty smooth texture. Come now time to serve this. Now it's time to serve this. You can also use sour cream as well. But what I have used is yogurt and I added lemon juice and some lemon zest to this. That has given exactly tanginess the way you will get out of sour cream. But that's pretty much easier version. This pairs very well with breads and carrot sticks. 11. 10 Beetroot HUmmus: Let's make beetroot hummus now. That's very much comfort food for all of us. We all make classic hummus. Come, let's begin by making beetroot hummus. Let's begin by adding boiled chickpea. So I'm using around 1.5 cup. Let's add some boiled beetroot. Now, let's add garlic around three to four cloves and white sesame seeds. Now, let's grind this and I add olive oil to this. Let's squeeze some lemon juice. Like, I'm just going to pour a little bit of olive oil to this. You can make pretty much different versions out of this. Like, you can use avocado, you can use turmeric, and many other flavors these days goes very well. You get a different variety of spices to hummus, pretty much comfort food and loved by all. 12. 11 Green Chutney: Hey, let's make green chutney. That's Indian flavor bom in a bowl. You love this recipe and you can pair with multiple multiple things. Come, let's begin with the recipe now. Let's begin by adding some green coriander. So spring onions, some green garlic or regular garlic, green chilies. Ginger. Handful of green peas or dried. Let's squeeze some lemon juice. A little bit of cumin and salt, ice cubes, and let's mix this. Time to serve this. Do make this guys and you can store in refrigerator for next four to five days very easily. It can last longer, but it will lose the freshness of this dish. But do make this and pair this with anything you want. This will be flavor bomb in your mouth. 13. 12 Pesto coriander : Love making pesto, and it pairs very good with many of the dishes, right. But let's make a different version of it. We normally use basil, but right now we are using coriander instead of basil. So that's definitely add more freshness to the dish. So traditionally, pesto is hand pounded. But these days, we don't have much time and so much of energy to do this. So what we're going to do is we're going to grind that in a very easy way. Come, let's begin with the recipe. Let's add some fresh coriander along with stems. Next, I'm adding around three to four cloves of garlic. Some walnut handful some cheese of your choice, half a lemon, green chili as for your taste, a little bit of salt, some freshly ground black pepper, and lots of extra virgin olive oil. Guys, don't grind this directly. Use the pulse method for this. So look at the consistency and work on it accordingly, adjust with olive oil or walnuts in case you don't get desired consistency. Come now, let's serve this. This was pretty much easy to do. Pair this with some grilled mushrooms on a toasted bread or just add this classic boiled pasta or spaghetti. You will love it, guys. Try this cheer. 14. 13 Basil pesto: Make a very classic and basil dip. That's a basil pesto. Very much simple to do. Quick to make. Come, let's begin with the recipe, guys. Let's begin by adding some basils. So I'm adding some walnuts. You can use pine nuts or peanuts as well around two cloves of garlic, a little bit of salt and some black pepper and some green chilies for the taste. Let's pound this. Next, I'm adding some extra virgin olive oil to this. Again, we're going to mix this well. Next, I'm adding some grated cheese. Cheese of your choice. Parmesan works best. Let's mix this well. This was pretty much easy to do in case you don't want to hand pound, use chopper or mixer grinder, but use pulse method instead of grinding it directly. And this pads very well, very well with pastas and maybe toast, some grilled cottage cheese, grilled chicken, and many more things. Do try. 15. 14 Smokey Tomato Dip: Let's make a roasted smoky tomato dip. We're going to roast some tomato and open flame. You can bake it as well. We're going to cook this with some onion and garlic. That will give pretty much smoky effect to your sauce, and whatever you're going to pair that with, come, let's begin with the recipe. Once it's cooled down, let's peel off the skin. Let's add three to four cloves of garlic and tomatoes that are just roasted. Let's begin by adding some oil. Let's add some chopped onions. We'll cook this on a medium high flame. Make sure we don't have to cook this completely, just a little bit until it becomes translucent. Next, I'm going to add tomatoes and the garlic mixture. We're going to cook this for a couple of minutes. We just go to add a little bit of water. I'm just going a little bit of regular cheese to this, just for a better texture. I'm going to add some salt, some black pepper, and we're gonna wait until it thickens a bit. A little bit of red powdered chilies. I'm just going to add some dried seasoning. That's combination of some dried basil, parsley, and oregano. I'm going to mix this well. Come, let's serve this now. This gives a right smoky flavor. You can use this while making a pizza or nachos or tacos or maybe on a platter. Try this, guys. 16. Dips & Sauces: Hi, everyone. I'm glad that you joined the class on delicious recipes of dips and sauces. Now it's time for your class project, a fun and simple way to put your new skills into action. Your project is to make two dips of sauces from the classes you just learned. Maybe it can be a yogurt dip or peanut dip or any other dip of your choice. Either you can use the same recipe or add the twist you want, and it's totally up to you. Once you're done with the recipe, take a picture, upload in the class project gallery. Also, you can add a note what you have paired with or what creation you have done from your end. This is a solo project, no group work. It's a great chance to inspire others in the community.
