1. 1 Introduction: Thank you for taking
this class Today, I'm going to teach
you how to make these chocolate chip
caramel eminym cookies. First, I will teach you how
to make the cookie dough. Next, I will teach you how to prepare the cookies for baking. Finally, I will teach you how to bake and cool the cookies. I am a self taught baker. Many years ago, I decided I wanted to open up
my own home bakery. I like my cake. Decorating skills were not at the level that
they needed to be. I took some classes,
watch some videos, read some books, and of course, did a lot of practice intel. I felt like my decorating skills were up to the level that I could make beautiful cakes for other people, for
special occasions. I then opened up my
own home bakery. I had this business
for several years. Part of this business, besides making cakes
for special occasions, was to go to farmers
markets and festivals. Cookies like these are excellent
to sell at those places. Had this business
for several years, until my husband got a job
offer in New York City. We felt like this was
a good move for us, and so I closed down
my business and we moved across the
country to New York City. Now here I do not want to go through the steps to open
up another home business, but I still love baking. As a retired teacher,
I enjoy teaching. I have decided to share my skills with you
on skill share. This class is aimed at the baker that would
like to learn how to make a delicious,
easy drop cookie. I am excited to teach you
the skills in this class. Let's move on to
lesson number one, making the cookie dough.
2. 2 Making the Dough: We're ready to start
making the cookie dough. We want to start by putting our dry
ingredients in the bowl. We need 2.34 cup flour, so there's two cups
and the 34 cup. We also need one teaspoon of baking soda and one
teaspoon of salt. We then want to
just take a whisk, whisk it all together. With that whisk together, we're ready to do the moist
ingredients in this bowl. We're going to cream
together our butter, our brown sugar and our granulated sugar
started on a lower speed. Then as we see the
sugar gets mixed in, we can speed it up. We're going to do this
for one to two until it's completely combined and the
butter is somewhat creamed. As you can see, that
butter is fully creamed, I do want to scrape
my bowl down. I'm going to add the eggs
and vanilla one at a time. So, we'll start with
the first egg mix that in when you see it's
totally mixed in, you want to scrape it down. I'm going to add the next take, mix this one till it's
completely mixed in. While that's mixing in, I'm going to measure
out the 22 springs of vanilla and dump that in. I'm putting this cover on now because I want to slowly
add the dry ingredients. I don't want to go flashing up. Let's turn that off. Raise this up, and I want
to scrape my bowl down. The last thing I want to do is stir in my chocolate
chips and Eminem. So I'm going to hit
very low speed. I really don't measure them out, I just dump the bag in. Once I feel like the chocolate
morsels are mixed in, I'm going to put in
my Carmel Eminem. Now technically you could
use any Eminem you want. I wanted to use the caramels, and once I see that's mixed in, I turn it off, pull this out, of course, scrape it all off
of the cookie dough paddle. And here we have
our cookie dough. We're now going to
cover it and let it chill for an hour or two
before we make the cookies.
3. 3 Preparing Cookies for Baking: Our dough has chilled
for a couple hours. We're now ready to get the cookie dough onto the cookie sheet so that
they're ready to bake. I have my cookie sheet here. I want to line my cookie sheet
with the parchment paper. I'm using an ice cream
scoop for my cookie dough. I'm just going to use the scoop to measure out some cookie
dough and then put it on my parchment paper. I want to leave about
an inch and a half to 2 " between the cookies. You can see I have about
an inch and a half to 2 ". I just want to
continue going along. I don't know, this
ice cream scoop is not working as well as it, probably because I
have such big chunks in my cookie dough. I'm just going to use
a regular spoon scoop some up and then with my finger just shape it into that shape. That's going to work better
with my cookie dough. I'm just going to keep going
until I have my pan full. It looks like I'm going
to do four by four. So 16 cookies on
one cookie sheet. Now obviously if you
want bigger cookies, you would just need to
do fewer cookies on the cookie sheet and scoop more up to make
whatever size you want. I don't really
want huge cookies, I just want your
normal sized cookies. Now that I have my
cookies on there, I'm just going to look and see this one looks
like it's not quite as big then I just want
to not really it down, but flatten each one
just a little bit. That way I can make sure
they're all the same size. If I notice one is not, I can add more to, it looks like I could use
just a little bit more. My oven is pre heated. In the next lesson,
we're going to show you how to cook and
cool the cookies.
4. 04 Baking and Cooling: We are ready to
bake our cookies. The oven preheated
to 375 degrees, so let's bake the cookies. I have my oven right here, and as you look, the rack
is in the middle position. I'm gonna take my cookies,
put them on the rack. I only want one pan
of cookies at a time. I'm now going to set the timer. And the cookies will cook
for ten to 12 minutes. I like them a little bit chewy, so I'm going to set
it for 10 minutes. The timer is just
about ready to go off, so let's take a
look at the cookies and see if that 10
minutes was enough, or if we need to cook another couple of minutes,
there's the timer. So let's look at these cookies. I pull them out and
we look at them. They look like they could use
another couple of minutes. So I'm going to go ahead and
give this two more minutes. There's the timer again. When you look at
these cookies now, can see they've got a little
bit of brown to them. The one thing I like to do the cookies when I take
them out of the oven is I like to actually plop them down so there's a
little bit of force. It helps flatten them a
little bit, not all the way. You can see that they're
not totally flat, but they're also
not too puffed up. We're now going to
let the cookies cool on the pan for
about 5 minutes. Then we'll be ready to move
them to the cooling rack. Our cookies have been cooling on the pan
for a few minutes. We're now ready to move
them to the cooling rack. I'm just going to use my spatula and carefully move
them to the cooling rack. And then we're going to let them cool completely
before we store them. Now this pan is ready
for more cookie dough.
5. 05 Final Thoughts: Thank you for taking this class. We had fun making our chocolate chip
caramel Eminem cookies. Of course, you could
use any flavor Eminem's that you
wanted in your cookies. I just chose to do it a caramel. We first learned how to
make the cookie dough. Then we learned how to
prepare the cookie sheet, and how to scoop and place the cookie dough
on the cookie sheet. We then baked the cookies, then took them out of the oven, let them cool for 5 minutes, and then we let them
cool the rest of the way on a cooling rack. I hope your cookies turned out the way that
you wanted them to. The recipe for these cookies
