1. Introduction to course: This is funky job. See, I am food stylist and a reciprocal later, I have been working in the food industry from the past, maybe 1011 years when I talked about food styling. What food styling basically is when you see this beautiful photographs clicked outside, maybe like a pizza order, Starbucks. And you can see the nice creating done their beautiful colors around it is a combination of food and coffee. That's a rule of a food stylist or food title is arranges things to make a photo look aesthetic. Reciprocal rate of when it comes to healthy and nutritious dishes because I have a husband and a child who are held fix this course we've designed to keep in mind the people who love to eat Indian food, but sometimes find it a little difficult or pink that it is complex. We have dishes ranging from the easiest, like a circuit to a baryonic, which is a little complex, not too much. This course is meant for people safe from age 15 to it has no limit as such for this course. So you can start as a person who maybe lives by themselves for a boy or girl, living in a host has the needs that he or she has to manage your own food. Or the person who's afford enthusiast lives by himself or wants to cook for his wife. For a person who needs to brush up the skills for cooking. Taking you through this Indian cause for the person who is into pasta's pizzas and wants to go to the roots. Sometimes it's the simplest dishes and wants to cook their lunch and even make fancy dinners. This is the course for you. Let me take you through this quick course and let's get started. 2. learning about spices and utensils: Talking about Indian food, Indian ******, Indian culture. There's so much to say, there is so much of color, there's so much versatility, so much of vibrance, love, warmth. In every Indian culture, in every household or different ones, there is some kind of celebration, some kind of ritual which is around phone does so many things that we do differently at our houses and Gujarati household, you will see mothers making lap see for the Sherif in South India. If you go, you will see them making pie awesome for different festivals. If you go to Northern India, they are making something for lowering. Every festival is associated with some kind of food. Our culture is very rich with traditions. Lot of family values. People believe in joint families, people believe in God. There's so much spiritual things around here. This country has so much to offer, this so much which is written about it and yet so much which is unexplored. There's so many people who've come to this country. Inserts of food, inserts of inner peace. Pinion culture is not only about people, it is about textiles, it is about food, it is about architecture. We can talk about things which are Indian endlessly. We have so many languages which are spoken here. So many different religions, so many different festivals. Indian culture is rich in science, Indian culture is rich in mathematics, Indian culture is rich in cold medicines. Indian culture is Richard Ayurveda. This so many foods that revolves around Ayurveda. There is so much that we talked about food where the food is healthier for you. They didn't. Culture has put us on a world map for so many things. Agora for being in the Seven Wonders, turmeric for his cancer curing properties, for finding 0 in mathematics. For UGA, there's so many things which are existing in India are spoken about worldwide practice across the globe and has done so much of benefit. People come to India looking for treasures, looking for food, looking for textiles. Countries has all kinds of posts. We have Cs, we have mountains, we have forests. This so much this country has got to offer. Let's talk about traditional Indian vessels and the material. Indian School in so many different kinds of veces, we cook in different kinds of utensils. Could I use one of our most traditionally spoken about vessel which is largely made of copper. Then we serve our food on a good traditional day in silverware because not only is it rich in culture, but also has great properties for your health. Food or water consuming silver has its own benefits for your body. Food is usually served in cancer vessels in India, which looks yellow in color, close to golden copper. It has great health benefits. Food is cooked in earthen vessels like the Avars, like Handy's, because it tastes sweeter, better. And also very way. We use stone where to grind up pastes like motel and fast food is usually serve in southern part of India on banana leaves and other parts of countries where disposables are made of dried leaves. These are not only good for the environment, but also the food tastes better on them. Did not only look beautiful, but they're also biodegradable. So they're great for the environment. Now that everybody has become so conscious of not using plastic, bamboo is used in India for so many purposes, from making baskets to making toothbrushes, to even making straws. We even cook in bamboo shoots. Traditionally, given flour. Wheat flour was made in stone with it used to be time-consuming, but because of the speed, the nutritional value of wheat used to retain, because it was not done very fast. Now, all those old methods are coming back. We are now making cold pressed oils, slow grind it flowers because these things you used to retain the nutritional value of the green and seeds. Red chili powder is made from red chilis which are grown in India, which have great aroma, great color, great texture. Mapping is said to have its own benefits for your gut. It is great for your body. It has great digestive properties and is used on a very large scale in Indian cooking. As FIT does King. King is used in tempering, in Lord of cultures in there, in southern part, in northern part, even in Woodruff and eastern parts as well, has cut friendly properties. It aids gas and also is good for your stomach. It is usually given to children when they have stomach aches. I don't recall the used in every Indian household gives great taste, gives great color, and also has cancer fighting properties and many other health benefits. Not only does it have a great taste and gives that added spice to your dishes, but also is good for your gut and has great medicinal properties, has been given to children who are in India when they catch cough and cold. Cinnamon is one of those wonderful ****** which are so versatile, can be used for deserts, can be used for baryonic, can be used for caries, and also is used for so many automatic other things that may not make is a very automatic spice, which is usually added to deserts. It is used in deserts worldwide. Not make, not only taste great in deserts, but when added to milk with saffron helps you sleep better. Since he spoke about Indian culture, Indian ****** and investors, I'm going to teach you a few easy, simple Indian recipes which can be made at home. Hi, this is funky Jackson. I'll be taking you through the Indian cuisine in the most simplest way you can make. I give you shortcuts, tips and hacks on how to make Indian cooking simpler, easier, and also healthy. Talking a little about myself. I'm a mother to her nine-year-old. I've spent 13 years of my life working in the newspaper. I'm a self-taught cook. I love to go kill the dishes. My husband is a gym freak. Most of the times I'm trying to work my recipes around our family. Something for my son's, something for my husband. Food really intrigued me. There's so many things that you can make this so much out there to learn. I feel it's such a work in process. Every day I come across something new. Every day I watch a new recipe. I wanted to try something home with my son. I want to teach him something to cook. Food is always a center of conversation. Be it your evening t v2 dinner or beat and extensive party. All we talked about or think about is planning the next meal. Let me take you through this journey in my style. 3. 3 Orange Gravy: Let's make the very basic and delicious orange curry, which is ideally used in so many in and vegetables also maneuver masala. It's very simple and needs very basic ingredients and it's very easy to make. Let me take you through its ingredients. They're very basic and available at home. Usually. We've taken chopped ginger, ginger, garlic cloves. You've taken chopped onion. You can take these roughly chopped onion also, and you can later add a few fine onions to bring that crunch to your gravy. And it's absolutely oxygen. You've taken chopped tomatoes, dry ******, cashew, milk. Basic ****** like we're totally powder, turmeric powder, cumin seeds, a little bit of garden masala. And let's start. I'm taking approximately ten cashews and soaking them in mink. Can take cashew pieces, you can take whole cashews. You can take warm milk, you can take room temperature milk. This aside. The LEO or cashews becomes soft, leave it aside for a good hour. We do this thing for so many gravies because it provides great body and creaminess to your career and also richness in a band, I'm going to use a mixture of oil and to prepare this vegetable, you can absolutely use only good if you want. But this mixture helps you to get a good viscosity here. Always helps to make sure that you get, doesn't get burned off. Some added one spoon of oil. I'm adding one's going to be making caries. Portion size of two. Once this mixture is hot, I'm going to add human seats that the human sees brown and I'm gonna add roughly chop gingiva, roughly chopped garlic. I've taken three cloves of garlic. If you like your vegetables, more garlic, you can add more garlic. Roughly jumping everything. And I've not made a pace because everything what is whatever that were cooking in the pan is going to go straight in the blender. Some saving a lot of steps here. I'm not making any payments. We are going to make one. Cory only. Showing the shortcuts. You can see ginger garlic half cooked off slightly. I'm not going to be around them because this is all going to get blended and it's going to be a part of the gravy. These are not the extra additional tempering that we usually add enough vegetables. I'm going to add CRI, roughly chopped onions. I'm only dropping everything that roughly you can even talk. Finally, it is not a problem, but as I said, everything is going to go into M60 and you're gonna blend it to a smooth paste. Make sure you pick up your anions. Well, we don't want the drawer teased of onion coming in your gravy. There's one more hack of making this gravy. You can put everything that I am adding the pen, pressure, cook it. Very simple process. Saves a lot of time, doesn't require too much attention to extending on the gas and tastes great. If you want a person to understand things in the kitchen, you notice so many shortcuts to things that you can actually do. Not you can follow these recipes as we've simplified every step for you here. Once your onions as slightly translucent, I'm going to add tomatoes. I'm going to add roughly who tomatoes to this 2.52 tomatoes. I have finally, each of the tomatoes, yo you can use each of them. It is also, it is absolutely fine. Once in the middle that added benefit that you have here is that you do not have to keep studying because tomatoes have so much water that it will never let anything that is in your pan born that fast. Every individual has their own preferences of what kind of spice mix they like. Somebody likes spice mix where it has more cardamom, somebody likes gloves. I always use very less guarded masala because I don't like the heat which it releases, that aftertaste, which it has never add gotta Masala. In a larger quantity. Smaller portion of them are soluble also do a great job. It's job is to provide flavor and aroma. Now let it sit and let your tomatoes and onion Kirchhoff for another five minutes. My tomatoes have cooked off nicely. You can do a similar thing for you on and gravy also, just the ratio of the metals to onions, like take less tomatoes, take more onions, then it'll become your brown gravy. I'm adding salts. There's always two days. There's no sixth measurement of salt. Have you had a person who doesn't understand much cookie? Never worry. You can always start with putting lesser and then keep tasting and increasing your salt. Again, there are different types of salts. Normal salt will be less salty sometimes if you use rock salt, it is slightly more Saltillo. For tomatoes and anion have cooked off. I'm gonna stop the gas MCAT. She's had been soaked in milk and it's almost been sitting for an hour. Now, what I am doing here is I'm grinding everything together for you to find a shorter method of doing this thing. I'm going to add my cashews and milk at the bottom. I'm going to add my cooked of tomato, onion, garlic, and ginger. On top. Saving is your choice. If you want to save it, if you don't, like the tomato pills coming in your mouth, you can see, but otherwise is gravy is good to go. I'm just gonna give it to blitz and it's done. Have blips it and my gravies ready? As you can see, it looks nice and thick. It's blended. Well, let's come together and you saw how simple it was. Everything goes in one M60 and it's ready to do an additional tempering to bring out a little red color and add extra flavors to it. I'm using the same pen where I cooked off the gray. I'm adding spoon on key. I'm gonna make sure when it comes to heat, I'm going to add a spoon of Kashmiri chili powder, which is not spicy but adds great color. Then I'm going to add my cinnamon stick. One cardamom and took gloves. Make sure that you do this step. Would you not to burn off your CD powder? Gravy. Now, mix that extra, additional tempering that we've done. If you were making funny button was Allah or wedge McCann voila, what we do is we add butter, cream to give you a gravy, that creamy texture, that milky taste. Currently, this gravy is a base gravy for so many vegetables that you can make out of it. I'm going to cook it for another five minutes. On a blue flame. I'm adding a little water. You can see my gravy looks nice, rich, thick cashews and milk help bind and bring everything together. Your gravy will not split, it will not look separate. This is your basic orange gravy. Few, like it's sweet, you can add a bit of sugar to it. Cook for five minutes. That'll bubble away a little. And then it's done. This so many variants and versions of making this orange gravy. While we puree everything in the beginning we use a puree of onion VP array, the tomatoes. So we blitz and grind everything beforehand and then we cook it off. What I have done here is Book of everything in one path and then just flips it in one grinder. Simpler, easier, and it tastes the same one pro tip that I can give you for any of these Indian caries which have got a Masada and these whole ****** is let it sit for a while. It is better when it has sat for 23 hours. There's certain vegetables like Bindi and ALU, which is simply cooked. They don't need to sit for too long. In fact, they don't taste as great if they've been sitting for too long. But these gravies, the aromas, the seep in. And it is better when they've been sitting for 23 hours. If you plan to make maybe a penny better masala or a wedge mark cannula or mixed vegetables. The evening with gum routines, with hot sorties. You can make this gravy in the morning and let it sit. You're going even refrigerate it. Gravy is ready. I'm gonna start with the gas. Going to get it out in a body. If you were one of those working humans, you can keep this gravy refrigerated. You can deep freeze it. Then simply use it on time to time whenever you need, you can you can add mixed veggies, you can add, you can add your marinade chicken to cook it for a while and it's ready to go. You can add drones. Gravy can be a base for many, many things. It's done. Indian dishes are known for something they usually known as funnel button masala or wedge McCullough. This is red gravy is a base for so many delicious gravy vegetables, which are usually used for eight with non-routine two-party, even sometimes with rise. It is not that difficult to make it at home as we sometimes feel. I'd get overwhelmed when we eat things in the restaurant. It's simple to make and as you saw, takes very less time to. 4. 4 White Gravy: Moving on to now making every child's favorite white gravy. Why do these very simple, very quick, and super delicious. Let me take you to the very basic ingredients that we require to make your white gravy at home. What a white booby. We need cashews, chopped onion, chopped garlic, some gingiva, some dry ******, cloves, cardamom. German seats. Fresh screen. Let me show you how to make it. I'm going to soak my cashews in milk. Gravy is all about milk and cream. You can even use fresh smelling. The fact that comes out of the milk when you boil it. Let you cache you sit in the milk for one hour. Pan. Some key. This certain steps which we have learned comes in so handy because there's so many dishes which have similar ingredients in Indian cooking. Similarly, if you're making South India, you will find several steps which are common. Once you cumin is brown. I'm going to add my chopped ginger, garlic. Gross thing it very little. Y be cocoa up everything before we blend. The rawness of the vegetable disappears when you make puree off onion automator. It is pretty different to if you cook them off and you've guided, I've used finely chopped onions. You can take onions which are roughly chopped, also slightly bigger because it's all going to go in a blender. On ends at great flavor, they add this natural sweetness to your dishes, wherein your gingiva adds heat and spice. Your dishes. The base flavor of ginger and garlic is spice. Onion is sweetness. Whenever onions will become translucent. I'm going to shut off the gas. I'm gonna take a blender, my soul caches and make which has been sitting here for an OVOC. And add my gingiva garlic onion mixture to it. Blend it and make it up. Find Paste. I've blended my gravy. It looks like this. Off-white color. Moving onto, I'm going to be in a band. You can add chopped onions here. You can add drop garlic herb. I'm just going to add my face right now because I'm going to keep it simple. You can do these alterations depending on what kind of vegetable or what you are using this grid before. You can use it for both tau, you can use it for hematoma lie. I'm going to clean my blender and add a little water to it. One of the most crucial step you're in this gravy is cream. This is supposed to be a rich and creamy gravy. This is not spicy. Visit slightly sweet. Have added approximately one bowl, say a 100 grams of Gremio. This gravy is rich. It's delicious. It's slightly sweet. You have to add a little bit of sugar in this gravy. All these are the bees Grevy's for so many vegetables that you can make at home. I have not added because pseudonymity dried fennel grape leaves in any offered so far because they add a little bit of bitterness. I'm going to add it when I use it to make my vegetables. These are base gravies that we've prepared. You have added sugar. If you are somebody who likes sugar in the caries go or you can add a little more. It has reduced its water. This much quantity that I've prepared. Good for two servings, for two people. I want to switch up the gas and so it now restaurants tidy, white gravy is ready. The source, simple and easy to make. It was simply fall in love with the recipes. Every time I have walked into a restaurant as a child, I remember I would complain a lot that my food is spicy. My father used to make it a point that he would order any vegetable in white gravy. He would ask the captain to make sure that food was not spicy. This gravi is super easy to make. Kids love it. Even adults do. And there are very few steps to it wherever, very few things you need. Make your white gravy for children today. 5. 5 Green Gravy: Moving on to now, making restaurants that green really, it's very simple to me. It's vague, fresh because we're using coriander and finish. The color is spectacular and it's not as complicated as it looks. Let's stop. Green gravy will be needing washed, roughly chopped spinach and coriander. This is where we get the color and flavor from. For the heat, we need green to list because we're not going to use regularly powder here. We are not going to use any dry ****** as in red, actually powder, automatic powder here. We're gonna need cashews soaked in milk so that we can get that body for the gravy, the thickness that we want. We're going to use garlic, ginger, and chopped onions. These are the best ingredients for a green gravy who's starting with soaking approximately ten cashews in milk. Use room temperature for warm milk for soaking or cashews. Let it sit aside for one hour till your caches software. And then we'll puree it with our coriander and spinach in a band. Take one's going avoid. One's going to let it splatter and turns slightly golden brown. Once a human fetus actually brown and they have released the aroma, add roughly chopped garlic looks small piece of ginger. I'm adding one green Julio. You can add more if you want. One chopped onions. What I'm showing you here is a 1 fourth Cory. Everything goes in the pan, then everything goes in a blender and it's ready. This gallery is easier to make. Why? Because whatever that we use in this gravy cooks really fast, spin it and coriander have almost 80 to 90% of water and cook super-fast when heated. Once I ended a little brown, I'm going to add the required amount of salt. And I'm going to add as soaked spinach and coriander. You can blanch these beforehand. Blanching is a process where you put your spinach leaves in a pot of boiling water and get them out after two minutes. If you don't intend to make a beauty, you can even then soak them in ice to read in the green color. Spinach and coriander pulsars really fast. If you can see the volume in the pan. Looks as if your pen is full after two minutes, you will see that they are reduced and they are less than half and quantity, let it sit for two minutes. Give it a mixed. Every once in awhile, if you can see a spinach has already wilted. Spinach and coriander release a lot of water. We're not going to burn off the water here. It is up to you. If you want to burn off the water, you can burn off the water. I'm going to use this water for my career because it has a lot of nutritional value. I'm going to add a little bit of Guatemala here. So you can add a bit of sugar here. Here's a little tip here. Whenever you are cooking spinach, spinach has slight pungency. Add small spoon of sugar. We don't want sugar, two eggs weakness, but this sugar will help you cut the pungency of your spinach. This has cooked off. I'm going to switch off the gas now. Whenever we're cooking spinach makes sure you don't overcook it, otherwise you will lose the vibrant green color. Let it sit and cool down for five minutes before we add it to the blender.
