I felt so fancy pulling this beautifully roasted chicken out of the oven. I really enjoyed this course. Elana Karp not only demonstrated how to perfectly roast a chicken (avoiding overcooked dark meat and undercooked white meat) but also how to adjust the dish for each season. It's fall here so I paired roasted red potatoes and carrots as the side dish.
