1. 01 Introduction: Thank you for taking this class. In this class, I will
teach you how to make these orange
soda pop cupcakes. We use little candy
to make the straw. I will first teach you how to make the batter
for the cupcakes. Then I will show you how to put the batter into
the cupcake liners. How to bake them. I will teach you how to make the frosting. We will then frost the
cupcakes and picked the straws in to make it look like this totally self-taught
Baker and cake. Many years ago, I
decided I wanted to make cakes for
special occasions. So I decided I needed to improve my cake
decorating skills. I watched a lot of
videos, went to classes, read a lot of books, of course, did a
lot of practice. Until my skills we're
to the point that I felt like I could
open up my own. I had this business
for several years. Well, I make cakes for
different special occasions. My husband got a
job offer though in New York City and we decided
it was a good move for us. So I close my own bakery and we moved across the
country to New York City. Now here in New York City, I do not want to go through the steps to open
up another home. But I still love
baking and decorating. I have decided to share my
skills with on Skillshare. This class is aimed at
the baker that would like to learn how to make some fun. I am excited to teach you
the skills in this class. Let's move on to lesson number
one, making the batter.
2. 02 Making The Batter: We're ready to start
making cupcake batter. Let me show you how we do this. I have a bowl here. And into this bowl, I'm going to put my three eggs. And I'm going to add my
vanilla to those eggs. And I want to add about 1
fourth of this orange soda. So not all of it, just a little bit. And then I just want
to whisk this lightly, tell it's all mixed and we
want to make it so that we see just the one color so that the white and the yolks
are mixed in together. Once we have that, we quit. And now we're ready
to set this aside until we're ready for this part in the
making of the battery, this large mixing bowl, I want to add my flour, my salt, and baking
powder, and my sugar. And I'm just going to turn the mixer on just enough
to mix that together. When I can't tell what's what and I know it's
mixed together. And now I'm going to
add my butter and my, the rest of the soda. Again, I want to just
barely turn the mixer on. Mix these ingredients up. Once the dry is mixed in the barracks with the
butter and the liquid. I'm going to turn this
up to me for a minute and we will be
when this is done. Going for a minute and a half. That for a minute and a half. Now, I want to scrape
the bowl down. All of this down in there. Now we're going to
add the egg mixture, but we're going to add
it in three batches. So I want to add about
1 third of this. And I want to mix the
same slope first, or it doesn't splash. Speeded up to about 20
seconds. 20 seconds. We're going to turn that off, add half of what's left. Once received the egg
is pretty much meet Stan up to meet him, give it about another 20. And now we're going to pour
that last bit of a mixture. Again, do it. I'll soon as that egg mixture looks like it's incorporated
the rest to meet him. Without incorporating
working to lift the sub script pad or off. It's a feeder going
to tick that off. And this is why I
like to just take a little taste of the batter to make sure I
didn't forget anything. Now I'm going to
scrape down the bowl. Are batteries made? We're now ready to put the
batter into our cupcake tin.
3. 03 Filling The Pans And Baking: We're ready to prepare
the cupcakes to be baked. I have picked the cupcake
liners in the muffin tins. And I'm using an ice cream
scoop to fill the cupcake. And I'm just going to stick
it in the cup cake batter. Over to the 101 scoop is all. I should do it using
the scoop like this. I'm able to guarantee my cupcakes are pretty
much all the same size. There may still be
some variation, but they're gonna be
closer to the same size. So I am able to portion
control my cupcakes. You go ahead and fill
your cupcake tin. Then I'll be back. When I'm
done filling my cupcakes. I was able to fill up muffin
tins for 24 cupcakes. Now, when I got done
filling them up, I had just a tiny
bit about her left. So I went ahead
and looked to see which ones might not have
as much as the others. And I put it in there because
I didn't want to start another muffin tin
that would end up with one or maybe two cupcakes. So this y is able to
do even to death. We're ready now to put
the cupcakes in the oven. They're going to bake at
350 degrees for 20 minutes. But I wanted to check them at about 15 minutes to make sure
they don't get over them. So we're going to
pick them in the middle rack, in the oven. And then we'll be back
when they're done picking our cupcake baked
for 15 minutes. After 15 minutes. Then the collectivist. And when I poked test
when it came out dry, now that we have them
out of the oven, we want to quickly dump cake tins and turned right-side-up
so that they can cool. And we do want to give some space in-between
each cupcake. We're gonna do that
for both paths. We're going to let these cool. They are completely cool. Then we'll make the frosting
and decorate cupcakes. So we'll be back when
these are completely cool.
4. 04 Preparing The Frosting: We're ready to start
making the frosting. Frosting is done on the stove. Let me show you how we
make it into our Pam. Dump the sugar, the egg whites, the soda, and the
cream of tartar. We're going to
turn on our Peter. Now the heat is not on yet. We still do not have the genome. Now, we're going to
put this on the row. We're gonna continue to mix it. You can see it's
starting to form peaks, but they're not stiff peaks. And it has been more than
ten minutes with mine. It's been closer to
15 to 20 minutes. So you just have to go and we're gonna go ahead and
stop there and turn our heat off and add one
teaspoon of vanilla. Then with the heat now, we're gonna go ahead and beat this for another
couple of minutes. Get it light and fluffy. Looks like it's going
to be spreadable. We're ready to spread
it on our cupcakes.
5. 05 Frosting And Decorating The Cupcakes: We're ready to start
trusting the cupcakes. I have my cooling rack with
the cupcakes that have cool. Now what I want
to do is I'm just going to put a little
bit of frosting on and then spread it around. And I'm just going to spread it like this because
I want it to look like soda or an ice cream Mt, I'm gonna use my spatula, put it on and then
just spread it. I don't want a way
he'd been up there. Now, once I get that on, I have these candies that
are gonna be the straw. And they do come
in several colors. And I do want to
break it in half. And then I'm just going to stick it in the cupcake for the straw. And you want the part you broke. Let's go into the cupcake and the other part to
be sticking out. So I'm going to
continue to spread my cupcakes candy on them
until I'm completely done. And you go ahead and do
the same with yours, then we'll be back. When we're done. I have fasted all the cupcakes. I didn't put the straws and all of them because
I wanted to show you that you could do it with
or without the stress. Either way would work.
6. 06 Final Thoughts: Thank you for taking this class. We had fun making our
orange soda pop cupcakes. Candy Strauss. You learned
how to make the cake batter. We then failed our cupcake
line with the cake, the other factor, cupcakes. We then cook them. After the cupcakes are cool. We made the frosting
for the top cupcakes. It's very light and airy. R&d type frosting. We then frosted and
decorated our cupcakes. We now have a fun place of cupcakes to share
with our friends. I hope you're cupcakes turned
out the way that you want. Your project for this class
