That looks so beautiful! I am really proud of you For an increased sour flavor 1. You can use the starter at a more matured stage instead of a younger stage as I used. 2. Another way of increasing sour flavor is to use a levain which I use in my second recipe 3. The third way would be to use a little whole grain or rye flour (50 Grams or so) and then you will get more funkier taste Really Amazing Well done

I had to proof overnight as it&rsquo;s still cold in California where I live. It was perfect loaf. The only thing is the sour taste was missing. May be will wait for summer when the culture will be super active.&nbsp;
