Luscious Lemon Squares (serves 24) Ingredients
в—Џ 1⁄2 cup butter, softened - replace with 1/2 cup vegan butter. (Butter is just adding some fat and liquid to hold crust together) 
в—Џ 2eggs - 2x GENERAL EGG SUBSTITUTE(4 TBS WATER, 2 TSP OIL, 2 TSP BAKING POWDER, 2 TSP CORNSTARCH). Could also add in 1/8 tsp black salt (for egg flavor) and pinch of turmeric (for egg color and yellow color for lemon).  Here, eggs as mostly being used as a binder and a little richness, no special instruction like whipping whole egg or egg white, so no other substitutions are necessary, just general egg replacer.
