Looking to make a tasty dish for the Super Bowl!  I'm on a spicy kick, so I figured this would be great... it's quick, simple and looks yummy.
  • 1 egg, beaten
  • 1/4 cup ketchup
  • 1/2 cup chopped onion
  • 1/2 cup Italian-seasoned bread crumbs
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound ground beef
  • 16 (1/2-inch) Pepper Jack cheese cubes

1. Preheat oven to 400 degrees F. Line a rimmed baking sheet with foil and coat with nonstick cooking spray.
2. In a large bowl, stir the egg, ketchup, onion, bread crumbs, garlic, salt, and pepper together. Gently mix in the ground beef.
3. Divide the beef mixture into 16 equal mounds and flatten slightly. Firmly wrap each piece of meat around a cheese cube.
4. Place stuffed meatballs on the baking sheet. Bake for 20 to 25 minutes, until meat is no longer pink, turning the meatballs after about 10 minutes.
