Some follow up questions I need help with

 

I mainly work as a freelance media producer. In exerpence do I list each job/project that lets say was a week long as different jobs or just freelance media producer on resume?

When I don't anwser "optional" questions like race, sex or health issues on the company job website, is this truly hurting my chances? 

What are some good resources to learn what my market value is? 

Should I mention my Skillshare classes on my resume?
