Why it's ok to steal from Benedict

When Matt Damon's character introduces Benedict, the character is dehumanised immediately ("That guys a machine"). This concept is built upon as Benedict's stict routine is described - his tasks are carried out with a machine like degree of precision and efficiency. We are also told that Benedict has considerable wealth.
When the description is given of the heavy handed manner in which Benedict reacted to being crossed by not only punishing the perpertrator but his family and loved ones it becomes acceptable for him to be wronged. This is the detail that takes Benedict from being a financially successful and methodical businessman to a villian. Given that Matt Damon and Brad Pitt's characters know this fact the audience can assume that Benedict is not shy about his ruthless nature and will make an example of any who cross him.
We are told the facts about Benedict while the visuals support this. We see him arrive at the casino and we hear about his strict and methodical routine. When we are told the story about the punishment he exacted on the last person that cheated him the visuals take on a new context and we are given an understanding of the duplicitous nature of Benedicts character. Outwardly he may appear to be a gracious host who learns multiple languages in order to interact with his clients and business partners but he is truly a ruthless villain who values money above all else.
