I've tried all the knives I have had in the kitchen and found my favorite so far, ikea small knife, with a very sharp blade so easy to make a nice clean slice without damaging the stem. Also a very comfortable handle.

Woody stems are difficult to cut with a knife, but soft and hollow stems very enjoyable.
