Having recently added dairy products to the long list of things (including all meat) that I don't eat - I was excited to find a recipe that looked tastey and ticked all the boxes.

The picture is of my first attempt which was delicious, the second time around I added some chilli flakes to give it a bit of kick and cut my potatoes smaller which made the tortilla more managable in the pan. I will definitely be adding this to the menu in our house.
