Here's my first attempt:

 

I think I will try varying my line widths a bit more - especially around the sign and largest tree and maybe remove some grass and clouds in order to make it look more minimal.  

This was a great class, Stephen. Thanks for posting it. Using the stamp filter really filled out the lines and almost made them look vector.
