GaryVEE here. Here are my notes on the wines we tasted in the class. Check em out!
PROSECCO
On the nose you get a lot of almond paste, pear, and yellow gummy candy. The palate shows peach, acacia flower, and an intriguing spritz of acidity. Very smooth with a long finish that brings out some of the crushed rock components that add complexity to the peach.

- Cavit Lunetta
WHITE WINE
2014 Hubert Brochard Sancerre Les Collines Blanches
This wine has an incredibly vibrant nose of apricots and orange peel. There is also a perfume element as well as a fresh laundry component. The palate opens with lemony acidity that subsides into a sake-like creaminess on the mid-palate, and finishes with an applesauce component along with hints of ginger.

RED WINE
2013 Chakana Maipe Cabernet Reserva Mendoza
On the nose there are strawberries and cherries with a hint of oak and a lot of powdered chocolate. The palate also shows tons of red fruit, but there is a blackberry component that you don't get from the nose. This wine is very dry and chalky with something like charcoal on the finish. A tremendous complement for a big meaty dish.
