**Ingredients:**

 

For the Lemongrass Shrimp:

- 1 pound large shrimp, peeled and deveined

- 2 stalks lemongrass, outer layers removed and finely minced

- 4 cloves garlic, minced

- 2 tablespoons olive oil

- 2 tablespoons fresh lemon juice

- Salt and pepper to taste

 

For the Garlic Butter Sauce:

- 4 tablespoons unsalted butter

- 4 cloves garlic, minced

- 1 tablespoon chopped fresh parsley

- 1 tablespoon lemon juice

- Salt and pepper to taste

 

**Instructions:**

 

1. **Prepare the Lemongrass Shrimp:**

   - In a bowl, combine the minced lemongrass, minced garlic, olive oil, lemon juice, salt, and pepper. Mix well.

   - Add the peeled and deveined shrimp to the bowl and toss to coat them evenly with the lemongrass mixture. Allow them to marinate for about 15-20 minutes.

 

2. **Cook the Shrimp:**

   - Heat a large skillet or pan over medium-high heat.

   - Add the marinated shrimp to the hot skillet in a single layer, making sure not to overcrowd them. You can cook them in batches if needed.

   - Cook the shrimp for about 2-3 minutes on each side or until they turn pink and opaque. Be careful not to overcook them, as they can become tough.

 

3. **Prepare the Garlic Butter Sauce:**

   - In another skillet, melt the butter over medium heat.

   - Add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant and lightly golden.

   - Stir in the lemon juice and chopped parsley. Season with salt and pepper to taste.

 

4. **Combine and Serve:**

   - Pour the garlic butter sauce over the cooked lemongrass shrimp.

   - Toss everything together to coat the shrimp evenly with the sauce.

   - Garnish with additional fresh parsley if desired.
