first attempt at cavatelli, which didn't go as well as i had hoped. the pasta did not roll out easily. it acted like string cheese, not holding together. i'm not sure what i did wrong, since i measured the ingredients with a scale. pretty frustrating. i will try again until it comes out right.
there is nothing like fresh pasta!
i bought my Imperia pasta machine in Firenze and lugged it back home in my carry-on bag.
i hope to make a cavatelli board to make cavatelli next.
