Understanding Apple ID and iCloud

i have a question....maybe i just missed this or misunderstood in the class. How do i delete things off of my phone but leave them on the cloud?

No problem. To answer your question I need to know a bit more.
If you use iCloud drive, and you have the Desktop and Documents folders enabled in the cloud,  if you delete files in either folder, they will be deleted in the cloud as well.
The iCloud works as a mirror.
If you have documents such as Pages, Keynote and Numbers, if you delete them from the iCloud Drive app or Files app from your phone, they will also be deleted in the cloud.
However, let me know what you want to delete and I can give you a better explanation.
