The course was very beginner friendly but the instructor used Illustrator 2023 and i was using the 2024 version with some AI features which are not present in this course. In this logo the instructor used 1 graient fill for every leaf and tried to match the direction but if you select the whole shape and go to object>compound path>make then you can add a radial gradient to the whole shape !
