All about Choux - student project

My attempts on the choux... :)

This is the Crème pâtissière à la vanille (vanilla pastry cream), the eggs I've got from a farm nearby has really orange yolk, so it got stronger colour. But looks yum! (note to self: use the whole vanila pod, didn't show much the vanilla on this one)

Then the Pâte à choux (Choux Pastry), photo below is the colling down part, before adding eggs.

Chouquettes

Then, my first attempt at piping the choux, I've chosen the Chouquettes!  I've used the template, just in case...

I didn't pay attention enough, and made the above shape, then tried again following the video and got better:

I couldn't find the proper sugar pearls, so I used this one instead and it is "OK". The proper one might arrive in a week (but I couldn't wait):

The result was really good, and they are delicious!

WARNING: you can easily eat the whole recipe after the chouquettes are finished!!!

 

My next attempt will be on the mini éclairs...

 

Éclairs

With the remaining of the choux from above I went on and did mini éclairs... I have to say, the first piping was not successful, very chubby and weird shapes...

Needless to say I really need more practice!!!

The chubby éclairs are cooling down to receive the vanilla cream filling.

And voilà! Ready and with chocolate topping (sorry, was too tired to make ganache, just melted chocolate)
