Sunshine Vinaigrette

Sunshine Vinaigrette - student project

I make a lot of vinaigrettes but never with fruit so I jumped at the chance after seeing chef Kelis' guava dressing. Supermarket didn't have guava so I sub'd mango and used a mix of olive oil/safflower oil for the fat. This was sunshine in a bottle! So vibrant, so full of flavor! 

I also made some refried bean quesadillas with my own 'cheat' sauce. A mix of mayo canned chipotle in adobo. Highly recommend.
