Imperial Chocolate Chili Stout
IDEA: Beer that taste like a bar of chocolate w/ chili!!!
Ingredients:
15lbs - Marris Otter Pale Malt
1lb - Chocolate Malt
1lb - Crystal 120L
1lb - Flaked Oat
0.325lb - Special carafa II (dehusked)
0.5lbs - Pale Chocolate Malt
0.5lbs - Cara-Pils
4pc - chopped Jalepeno peppers
6oz - Oak Chips from used Tabasco Pepper Sauce Barrels
1oz - Whole leaf fuggle hops
1oz - Whole leaf Simcoe hops
2 vials - White Labs Irish Ale yeast
- 21qts water and bring to 130*F
- Add grain and hold at 122*F for 30 min
- Raise to 156*F and hold for 30 min
- Bring to 168*F and holf for 10 min
- Sparge with 4.75 gallons at 168*F
- Bring to boil and add 1oz Fuggle
- Last 15min of boil, add 4 jalepenos (chopped), 1 oz simcoe
- Last 10 min add yeast nutrient
- Cool, xfer to carboy, add 2 vials of White Labs Irish Ale yeast and 6oz Tabasco wood chips
Primary: 1 week
- Xfer to secondary for two weeks
- Keg using 1 cup Steens Black Molasses as priming sugar
OG: 21% BRIX FG: 12% BRIX
Solid beer! Next attempt will try to make it more chocolatey with some vanilla beans and lactose
