Gluten free Florentine cookies

Thank you Justin and Irina for this delicious recipe! My curiosity got peaked as soon as Irina mentioned these cookies, and I now finally got to bake them. I got organic oranges just for this. I kept the peel and sliced it, and followed Justin's instructions, and here are my candied oranges, straight from the oven:

And made the cookies: I used almond flour instead of chopped almonds and walnuts, because I am on a trip and am missing some ingredients. Also, since I am making it for my kids, and they're pretty picky, I omitted the dried fruit. It looks paler, but it's still wonderful. And lastly, I replaced the regular flour with coconut flour and white corn starch because I can not have gluten!

I may try to add chocolate, but this is sweet and yummy already without it!
