I couldn't resist taking this one-video class as a way to jumpstart some pickling inspiration. I just finished a batch of preserved lemons and found this class to be a good little dip into the world of traditional pickling. Here's my first attempt! I'll update in a few weeks or so when I taste the results.

Cucumbers (I couldn't find seedless, so I scooped the seeds out), carrots, radishes, one smashed clove of garlic, about a teaspoon or so of yellow mustard seeds, two stems of dill, 1 tablespoon of salt, 3 tablespoons of white vinegar (I'm already worried that it's too much) and I filled up the rest of the jar with water.
