So happy I took this course, since I was certain that making dumplings would be a nightmare!
I used pizza flour (for lack of regular flour), but they turned out great nonetheless :)
Also, I substituted the meat/tofu for dried shiitake mushrooms which I soaked in boiling water and then diced. They really added a rich, deep flavor - so, I highly recommend trying that.
I have a nice trick for rolling part - since each disk is quite large, and I do not have a surface big enough to hold 32 such disks, I layered the disks 4 at a time on a plate with dusted plastic sheets in between the layers. That way, they stayed moist enough, and did not stick to each other.
