The Step By Step Guide On How To Make Pista Kulfi, A North Indian Ice Cream

Class Description

Students will learn how to make Pista (Pistachio) Kulfi which is a North Indian favorite, an ice cream with a difference. One cannot use an ice cream machine to make this recipe.

Here I have given a step by step guide through the whole process.  There is a total of 8 videos in this class and total time is 14 minutes and 40 seconds. The total time to make this ice cream up to refrigeration is approximately 3 to 3 1/2 hours. Since the bulk of the project is boiling down the mixture from a full pot to a 1/3 pot level, and the final part is adding in the whipping cream (when the mixture has cooled down) and subsequent mixing of the whole thing to get the final kulfi mixture which will then be poured into molds and frozen. Freezing is also a two part process.

There are only six ingredients for this project. 

  1. 5 liters of full cream milk
  2. 100 gm of pistachio
  3. 100 gm of almonds
  4. 20 pcs of green cardamom
  5. 5 cups of sugar
  6. 1.2 liters of whipping cream

Please follow the guide in the sequence given and I promise you that you will get it correct the first time out.

Class Project

You do not have to be the perfect cook to duplicate this recipe. It may be a bit lengthy, but I promise you that you will get there. I have already repeated this process several times, and you can say that I am an expert in this. 

If you notice the cover image, you can garnish the final product with a sprinkling of pistachios at the top or any other condiment such as nuts or raisins, that suits your fancy to go with a sweet dish.
