I am so excited to start teaching on Skillshare.  I am a personal chef and cooking teacher in Berkeley, CA.

Cooking good food does not have to be complicated or time consuming. Learn how to make a delicious ten spice blend to take your average chicken dinner to the next level. I will share my proven techniques to make chicken that has a golden crispy skin and tender, juicy meat.  Be efficient in the kitchen and learn how to serve this chicken dish in three exciting ways.  Be inspired to throw away your take out menus and cook meals you will enjoy even more!

Cook Lotta Herb Rub Chicken - Serve it Up Your Favorite Way

 

Project Description

Follow video and download recipes to cook Lotta Herb Rub Chicken.  Choose your favorite way to serve it up  — over rice with caramelized onions, on top of a veggie salad with pumpkin seeds and lemon dressing, or as a greek pita sandwich with yogurt sauce.

  • Cut throw skin to peel off
  • Lay onion in 9 x13 dishes

RUB ON CHICKEN

- Give it good coverage, people worry about over-spice, but actually not flavorful enough. Don’t be afraid to spice! Gets less intense during cooking

BROWN CHICKEN

  • Magic Trick for crispy chicken!
    • 2 tbsp canola oil
      • higher smoke point, olive oil has low
    • Medium heat
    • MUST wait till oil fully heated -see little bubbles
    • Cook each side 4-5 until golden brown
  • Lay browned chicken on top of over onions
  • Cover with aluminum foil and bake for 40 minutes

COOK RICE

1 Part Rice

2 Parts Liquid

Prefer Vegetable Broth for Flavor

- Bring to a boil and then cover,  bring temperature down to low and simmer 18-20 until all liquid is absorbed

- When done, turn off heat, remove lid, cover with a clean towel and then lid
