Pickled Eggs

I love pickled eggs, but I've been having trouble finding them at my local grocery stores. So, armed with my new pickling knowledge, I decided to take matters into my own hands. I looked up a recipe, but any idiot can screw up a recipe. I'm going to screw this up in style.

The elements of the experiment:

  • 6 farm fresh organic eggs
  • 12 oz water
  • 12 oz white wine vinegar
  • 1 tbs Himalayan pink salt
  • 1 tbs Saigon cinnamon
  • 2 tbs pickling spice

The ritual:

  • Bring eggs to a boil, turn of flame and let sit 15 minutes.
  • Put eggs in ice bath while returning water to boil.
  • Boil eggs for 10 seconds and set aside.
  • Combine water, vinegar, salt, cinnamon, and spices and bring to boil.
  • Reduce brine mix to simmer for 10 minutes.
  • Peel eggs.
  • Put eggs in clean jar and pour in hot brine mix.
  • Refrigerate.
