My Potato Salad

As an Air Force Brat, we traveled all around the world when I was growing up.  So we got to try all kinds of potato salads.  I don't really have one that stands out though... My mother makes the classic with hard boiled eggs and mustard in the dressing.

Here is what I made tonight...

Red Potatoes


Red Onion 

Fresh Dill

Garlic Pepper and Garlic Salt

I only wanted to use 2 pounds of potatoes - and halved the dressing, but I still may have over-dressed it.  Will see how it is after it chills.  The other difference is that instead of vinegar in the water, and lemon juice in the dressing, I used pickle juice in both places.


I like the addition of sour cream to the dressing.  Nice touch.
