Mom improving family breakfast

I am a mom and we do have breakfast every day together, only we tend to eat mostly the same kind of food, tipically spreads on bread. I saw this class and liked the idea of trying some new, healthy things.

The carrot cookies recipe was really tempting and seemed easy to make. I replaced the maple syrup with date syrup that was very thick, so I added a bit of water. The cookies are in the oven, I hope the replacement I made works ok. Tomorrow we re going on a trip, I had plan to eat them at breakfast and also take them as a treat on the road :)
