Kale-stuffed (turkey) Balls

I've been eyeing the ground turkey at Trader Joes and I finally had an excuse to buy it and get my hands dirty, very excited! 

So I decided to play with random ingredients I had in my fridge and chose kale, jalapeños and some onion for the meatballs. 

I mushed it all up together and added some shredded parmesan cheese for some extra flavor. 

Because the kale wasn't cooked it was a bit tricky to put the balls together but I finally made it work.

I left them in the oven for about 15-17 min. They came out pretty good, but next time I will defintely be mindful to put them in the oven for less time (they were a tad bit overcooked) and I won't be afraid to add more seasoning and spices in order to make the taste really pop. 

Overall, I'm very happy with the result. I had a lot of fun experimenting with different things and getting to use my hands to get everything together. Can't wait to try this again!
