I thought I was already making good grilled cheese...

...but then I took this class (recommended to me by someone else who took it) and the method makes a damn fine sandwich.

I used two cheddars (one is a strong one that I like, the other a typical medium), and Gouda (nice and melty). I'm not big on mayo, but just a light swipe works great to brown the bread but not make anything mayo-flavoured! I was so surprised about that!

I've been making grilled cheese sandwiches for over thirty years, but this class has improved my technique. Delicious!

We're going to experiment with making tuna cheese sandwiches next. :)
