I'm in a "Dumpling Mood"...

Always wanted to learn how to make these.

Going to buy those ingredients today!

Started! Already realized I bought Bok Choy (Chinese Cabbage), instead of Napa Cabbage. Oh well, chopped it up and it's now sweating from the salt sprinkle...

Chopped and mixed together all the ingredients, barely had enough Sesame Oil.
The filling is ready to go now. Used turkey instead of chicken.

Made a burger from the mix and ate it over salad greens, ...it was delicious!
Now for the dough part.

Flour always makes me very nervous, I'm worried about the mess / powder, but I must say this was a breeze and not much dust. The kneading of the dough for 10 minutes was almost like a meditation, super relaxing. And the dough is so soft and supple, they are now resting for 20 minutes. Getting close!

I had so much of the recipe between the dough and filling... had to just continue on. So dug-up the "bamboo steamer" (bought it in Chicago a few years back, when I lived there, so glad I had one) and proceeded. Made the purse type dumpling, they were trickier to make, should use a 3" diameter dough.
They look like pinwheel purses, very yummy purses!

I loved these, just need to get my sauces right and figure the rest of the meal. What would be a good accompaniment? I am now going to make that broth / soup... but it will be for another day.

A wonderful soup with some left-over dumplings and maybe too many vegetables!
Thank You for such a wonderful class Joscelyn.
