How to Cook Ham & Cheese Spoonbread

Has anyone ever heard of spoon bread? It is neither a bread pudding or a soufflé. It is beloved in the South both as a main course and a side dish for breakfast, lunch, or dinner. Several states - Virginia, both Carolinas, Maryland, Kentucky, and Tennessee - all claim to be the home of this specialty. Apparently President Thomas Jefferson, an early epicurean, was said to favor spoon bread. In it's most basic form, its ingredients include: cornmeal, eggs, and milk.
