Here is my project. Gluten free pancakes

I made my pancakes using the basic recipe that Marc provided. Here is my version.

  • 1/4 cup of Namaste gluten free flour
  • 2 T Sugar
  • 2 t Baking powder
  • 1 t Cinnamon
  • ½ t Salt
  • ¾ C Water
  • ½ C Almond milk 
  • 2 T Oil
  • Scraped vanilla bean (1/8th of the bean)

Changes that were made. I used a gluten free flour called Namaste. I haven't checked, but I am pretty sure that a primary ingredient was coconut flour. This flour is very absorbent and REALLY absorbs the water.

I added another half cup of fluid, and I actually think that I ended up adding another cup of fluid after that.

I used a panani grill at 425 degrees. I think that I was too impatient and didn't let them cook enough and flipped them early.

The texture was a bit odd, (the coconut flour), but eminently edible.
