Gluten Free Mug Cakes!



For my first class I decided to share what I've learned about making allergen friendly mug cakes!  When I found out I had food allergies, life got really stressful for several months as I made dramatic changes to my diet!  Cooking without gluten, dairy, eggs, corn, or oats - was really challenging at first!  Possibly the hardest part, was the absolute lack of comfort foods.  So, over the last few months I've been experimenting a lot!  I don't need a whole cake for myself, so making single servings has proved to be the best option for my family!  Now when we are getting ready for a birthday party or graduation - I can pop one of these in the microwave before we leave and have cake to enjoy like everyone else!  

  I use the same concept for muffins in the morning, so I'm already planning for my second class!
