Getting my brine on!

Okay finally got around to experimenting and playing with brines.

First up, pickled pineapple. I was inspired by a mexican food stall we have in town. They do a killer fresh pineapple salsa and I remember years ago seeing a pickled pineapple recipe some where. So I figured I would put it together. 

Recipe

Pineapple (about 2 cups...basically enough to fill the jar I was using)
Pinch of sugar
tablespoon of oregano
1 tiny white onion slices
2 dried hot peppers (from our garden this summer actually)
White vinegar
dash of apple honey vinegar
Water

Super excited to taste it!

Another pickling project is underway. This time fiery green beans.

green beans (trimmed)
jalepeno sliced
garlic smashed
honey and apple cider vinegar
water
salt
sugar
whole black peppercorns
dill
