When starting this project I was originally going to use an audio clip from the movie, Monty Python and the Holy Grail. The audio I found was pretty poor. This got me thinking about copyright laws and the slim chance the video would get pulled for copyright infringement, so I went another route. The Library of Congress has all sorts of field recordings, many of which don't have an explicit copyright, so this was where I got my audio clip. It is a sort segment of an interview with a man who discovered the value of selling offal cuts of meat, in particular from chicken, at his late night restaurant.
