BIG Quesadilla!

I used almost all ingredients as were mentioned in the recipe. The major differences were the portobello mushrooms, and tony's cajun seasoning. I even went to a hispanic market and found the correct cheese. Oh and instead of folding the tortilla, I just put cheese on top and placed another tortilla on top, and cut. It was sooo good. :)
