Apple and Fennel infused salt

Ingredients and instructions:

  • Reduced apple juice on stove top
  • Fennel seeds, crushed using a rolling pin as a substitute mortar and pestle

  • Mixed crushed fennel into reduction, and added coarse sea salt
  • Dried mixture in oven for an hour, mixing every 20 minutes.
  • Left overnight for two days to air-dry, so as to not burn the apple element

I am going to try using this infused salt, next time I makea roast pork. I can only imagine the crackling I can make with this ...
