My name is Myrna Elguezabal and I love so many things, but WINE is definitely up there on my list. If you’re reading these lines that’s because you probably also love wine, are curious to learn more, and don’t know where to start. 1. Introduction ns: Welcome to the White voyage. If you are new to my courses, thank you for joining. And if you took my wind one-on-one course, it's great to have you back. This course will deepen your knowledge on Spanish wines. And with that, you will be able to enjoy outstanding wines without breaking the bank. Spanish wines are hard to beat when it comes to value. And I'm not just talking about red and white know, also sparkling dessert wines and more. So get ready because we are about to embark on a voyage to one of the most fascinating and delicious white regions of the world, being vanitas. I spent here. 2. Let’s travel to Spain ns: I'm so glad you decided to join this course and still happy. I get to share with you all about my favorite wine country, Spain. I will start off by saying that Spain has a very, very special place in my heart. This is the country where my wind journey actually began. I fell in love with wine while living in Barcelona. I took my first course there and have been passionate about this fermented grape juice ever since. So I hope you enjoyed this course as much as I enjoyed putting it together. And please make sure you download all the resources. Bowman sentence, let's begin. 3. History ns: The process of winemaking arrived to the region that we now know as Spain with the Phoenicians. And this was around a thousand before Christ. Then the Romans took over the region and winemaking continued to flourish and actually expanded throughout the region. Then in the eighth century, the wars occupied the region, which costs a general decline in wine production. It was a decline, but it didn't entirely disappeared. This is because the wars allow the wine to continue being produced. Specifically though for religious purposes, like communion. Then came the 12th century. With it. This is the time of the crusades. And this was the recapturing of traditionally Christian territory from the morse. After the Easter, wine production started to get back on its track. Spanish wine production and exploitation continued growing throughout the 17th and 18th century. But the big breakthrough came in the mid 19th century. Around this time, a plague appeared in Europe. The lock Sarah, this plate was responsible for almost destroying all of European vineyards. The plague hit first and France and has the wine industry in France started crippling. Many renowned wine makers started making their way to Spain, particularly to the region of real. In the North. They were looking for new opportunities. And as they moved, they also brought with them invaluable knowledge and more advanced wine-making techniques. This improved the quality of Spanish wine and set them on the road to become one of the finest in the world. Now, the plate, the locks or it eventually did reach Spain and it was devastating to many wine regions. But it advanced at a slower pace than it did in other European countries. And luckily, by the time it was reaching its peak, the remedy to the plague was found. But just when things deemed a bit brighter for Spanish wine making, a civil war broke out that lasted from 1936 to 1939, followed by World War II. The consequences of the Civil War were truly devastating. Thousands died and disappeared, and a military dictatorship was put in place that lasted 36 years. Many vineyards and wineries were both neglected and destroyed during this time. Then World War II, King. And that closed off the market for exports, worsening the situation. Things started to become more stable in the 50s. And progress was being made with new wineries being founded. And the quality of the wine started to improve and demand started to grow. In 1975, the country transition to a democracy. Then 1986, it was accepted to the European Union. The period of modernization and growth for Spanish wine had officially begun. 4. Geography & Climate ns: Now that you know some of the most important details about the history of winemaking in Spain. Let's discuss the geography and climate of the region. In the world of wine, geography and climate is everything. This is because it has a direct influence on the product. You then holding your glass. That is what terroir is all about. Terroir refers to all the factors that contribute to the characteristics of a line. This includes the location, climate, altitude, soil, and so on. Spain is located in the Iberian Peninsula. In Southern Europe. It has an area of 505,990 square kilometers. The country is surrounded by both the Atlantic Ocean and the Mediterranean Sea, where you can also find several Spanish islands like an IDS. One subtle thing, my famous E visa and many more. By the way, did you know these islands also produce one? And it's excellent wine, but that's something that we're going to look at later. Spain is home to some important mountain ranges, like the purine score to the data concavity and many, many more. The highest point in Spain is actually not in there. But in one of the islands that they, they volcano in the island of G9, yes. One of the most important geographical features of the country is the MiSeq does. And this is a vast plateau that extends over 210 square kilometers and has an average elevation of 660 meters, with the capital of the country, Madrid at its center. Now, let's talk about the rivers. There are so many, but the major ones are Duetto, fabulous, Well, Deanna and menial. When it comes to climate, Spain is the most climatically diverse country in all of Europe. For the most part, it has five climatic zones. We won't go into all of them. But essentially, Spain has hot summers and cold winters inland, and mild summers and cool winters on the coast. So if you're planning a trip to Spain, make sure you check the climate of the region where you're traveling to because they're not all the same. Spain is a country with a huge biodiverse city covered in mountains, rivers, with diverse climates and also diverse soils. And all of these factors contribute to the uniqueness of Spanish wines. 5. Vineyards ns: I added a section specifically on Vineyards because I think it's quite fascinating that Spain is the country with the most vineyards in the world. It has 969 thousand hectares of vineyards. This is around 13% of all the land under vine in the world. Every single one of the 17 autonomous communities of Spain produces wine. And the beauty of this is that so many of these vineyards are seriously old. I mean, 300 years old. 6. Spanish Wine Law ns: Now, before we dive into the main regions, let's learn about how wind is regulated in Spain and what the label can tell us about the whites. There are five classifications for Spanish. One, Let's start with the first one, V naught Vanessa. This is your basic everyday table wine. It is the windup by law has less restrictions. It only has to be made from Spanish grapes. And it's not a wine that you will easily find outside of Spain. Venus, they let the era. This translates to wind of the land. And this classification needs to follow some rules on the specific region without the rules being too strict. In this classification, the name of the grape can be printed on the lake. Then I'm going to see younger DO. And this is what we will actually be focusing on. The most ominous Youngevity DO translates to denomination of origin. Most Spanish wines fall under this category, and you will see it noted on the label. In order for a wind to be classified as D0 phenomena, can the one has to comply with strict regulations? Mina, DOC or deal killer. This translates to denomination of origin classified. It is the highest classification for Spanish wines. And as of now, only two regions have this classification. But he owed act and to be a pre-lab or a real Hawaii, the producers from that region need to follow very strict regulations and adhere to historic traditions. The last classification as V naught the BP. This classification is given to a wine that has been carefully produced and comes from a single vineyard. The ones that I want you to remember are, DO denomination of origin, DOC, a denomination of origin classify and VP? Because these are the ones that you will more than likely find in restaurants and wine shops. Also, because if you see one of these classifications, you can already rest assured that the wine is following a set of guidelines to guarantee its quality. Another very important factor in Spanish wine is aging. Aging is found on many of the labels, mainly from Johan and rebate other dwell. And this is what you will read on the label and what it means. Calling. Covid in English means young. So as the word says it, these are young wines that more than likely did not spend a lot of time in oak barrel. The style of these winds will therefore be more on the fruity site. Is this a wine to drink not to keep for too long periods? If it's directly on-site and it must be aged athletes for 24 months. Of those 24 months, six must have been spent in oak barrels. If it's a white or rosy, could answer. It must be eight for 18 months, out of which six were in Oak Barrel. These winds will have more body and structure and are the perfect, high-quality everyday drinking wine. What I said about red wines that are classified as my setup, I must be aged for at least 36 months, out of which 12 will be spent in barrels, and the rest in the bottom. Light and Rosales that are labeled, as was said, about our aged for 24 months with six months in the barrel. That I said my label is used for wine produced with the best grapes and in the best vintages, then to just means years. They are also often age to longer than what the classification requires. These are serious, complex and elegant winds with a nice balance of fruitiness. And OK, the landless sediment to be labeled S and granular set of red wines must be aged for at least six months, out of which at least 18 months or spent in barrels. White ground, what I said about must be aged at least 48 months out of which six months rent variance. Instead of us, are not produced every year. They are only made in years with exceptional growing seasons and with the best quality of grapes are harvested. These are the most complex winds in the Spanish market and are also aged usually for longer than what the classification requires. Several lines are elegant, well-balanced, and how the complexity of aromas and flavors that continue evolving. These are special lines in d. Now you don't have to remember all the details of each category. But I do encourage you to remember the order so that when you're purchasing a bottle of wine, you know how long it's been aged for approximately. This will help you to better understand the style of wine you're ordering or purchasing. The asset, for example, will taste and feel very different from a grand. But I said there is not a good one or a bad one. It's just a matter of styles and what your preferences at that specific moment. But I'll share with you this. Some Spanish wines can age for decades, only improving with time. 7. Spanish Grape Varieties ns: Thing is also one of the countries with the largest amount of indigenous grape varieties. These are varieties that are native to the region. Other varieties, Cabernet, Sauvignon, merlot, shorter names, so on, are also grown here. However, most Spanish whites are produced with indigenous varieties that allow them to showcase their diversity and uniqueness. We will learn about these varieties in the next chapters. As we studied the different regions of Spain. 8. Main Wine Regions ns: As we've learned throughout this course, Spain is a country with a long history of winemaking. The route pretty much it's entire territory, including the islands. It's not surprised that it is home to 69 major wine regions. Spain has a wonderful way of blending tradition with innovation to produce outstanding whites. But I've carried the best of both worlds. The next chapters, we will be exploring Spain's main denomination of origin. These deals are found within autonomous regions in Spain. Some of them have even ten deals. Now, we won't be discussing all of them. Before we get started. I want to give you some examples here that ECS and autonomy, this region. And three as by shall deal is one of the deals found within here. Okay? Now let's get started. 9. Rioja ns: Johan, you've probably heard or read this name before. Viola is both an autonomous region of Spain and also one of its most well-known binary agents. As I mentioned a few chapters back, during the Philips or a plate, many French winemakers migrated to Spain, particularly to this region. They brought a lot of knowledge and modern winemaking practises. And their influence was a before and after for the region and for all Spain. You'll face in the North Central Spain, by the upper EBITDA river. Hundreds of wineries have their vineyards close to the river. The area is divided into three sub areas. Real and real hot audience. Some wine bottles will specify the region of fuel, how they are from. Now, each area produces wines with distinct characteristics that come from the different soils that each region has. One thing in common, though, real Hawaiians are predominantly produced with the grape varietals, then this is the king of red grapes and Spain. Now, this doesn't mean that it's the only grid variety. In fact, most wines from the region or a blend. However, temporal needle is the predominant variety, are usually medium to full body. These are big, complex ones with earth, the leather and black cherry aromas. They tend to have very high tannins and very high acidity, which means they can age very well. The wine classification of yoga is slightly different from the regular Spanish wine classification. Real Hawaiian bylaw, age longer than in other regions of Spain, the US oak barrels. And this is very important in the denomination because it gives them the characteristics and the uniqueness they are so well-known for. The aging period determines the classification of the wine and therefore the style. If the wine ages for a short period, it will be younger and fruit ear. If it spends more time and then it will have more structure, more aromas. The value of wines from your cup is unbeatable. You can buy an outstanding good I said about wine, and this is the highest classification, remember, without breaking the bank. But it also produces lines or real Hubble. And these are small production wines made from the grape variety view that you will have. Blanco can be alive, crisp line with citrus aromas or a medium body, a little bit more complex with tropical erroneous. It really depends on whether the wind was aged or not and whether it's spent time in barrow or not, know how to read a bottle of. The classification will be real high DOC, which is the denomination of origin value fit that. This is one of the two regions in Spain. To help this, you will therefore see written real high DOC. You might also see in the label or audience. And remember, that only refers to the different areas within we'll have where the wind was produced. It will also state the agent classification and it is asphalt from the least to the most common. The answer. But I said about engram. If you notice it's not written in the bottle, then it's probably a young wine holding. Real hub produces some of the best value Spanish wines. And to be honest, I think one of the best value of wines in the world. So make sure you have some lines from people. 10. Castilla y Leon ns: We are in the autonomous region of the figure ilium in northern Spain. As with the rest of Spain, winemaking here has a long history. And it proof of it is that in 1972, during the time of harvest, some blind growers and covered a mosaic from Roman times. The mosaic measured 60 square meters and it had images on your Baptist, the Roman god of wine. The first denomination of origin from this region that we are going to look at. It is also the most important one and well-known. This is Rivera. They dwell. Be better than dwell. Deal. Along with a real harm is one of Spain's most important deals. Pretty better than Duetto translates to river bank of the Duetto. And that is because the wineries and vineyards are located at the banks of the river. This area produces wine at some of the highest elevations of all of Europe, with vines content at an altitude of up to 850 meters. Something that I find really fascinating about the way that they do better is the diversity of its soils. It has 32 types of soil. So as you can imagine, the winds, although they are produced from the same variety, are different and unique. The use of oak barrel and the region is also very important. Most of the lines are rare, but they also produce some roses. The main variety here is also the indigenous grape variety, intermediate. Remember, then put a needle. It's the king of Spanish grape varieties. But here it goes by a few different names. For example, being buried by being female in comparison to pimp. But I knew from the ones from preventive and Duetto tend to have a deeper color, deeper tannins, more intense black fruit, character, fuller body, and with a higher level of alcohol. They produce both red and white wines, but they're mainly well-known for a spectacular red wine. One of my favorites from the grape variety, man Sia. These wines are very different from those of Rio and rebelled and dwell. In comparison. These winds are lighter body and with more Redford characteristics. And they also don't go through the long aging process. Does yoga and be better than Duetto do? Msl wines from BSO are comparable to a peanut moire. So we can call it the Spanish peanut anymore. Now, let's move on to another autonomous region. And their deals. 11. 5 stars: Hello. I just wanted to take a quick moment to check how the class is going for you. Recently, online video platforms made some changes to the review system and they're prompting people earlier for it. This can happen even a few minutes after you just started the course. And of course, I know it's hard to know so early on whether you should give the class a five-star rating. And that's why I created this video. Okay, let's continue exploring wine. 12. Navarra DO ns: Have you heard of the famous running of the bulls in Spain? Well, it takes place in the city of bumps, which is the capital of the autonomous region of Nevada in northern Spain. Before we discuss the region, I want to highly recommend you to visit if you haven't been. It's a unique region that embraces traditions and has so much to offer. Hardy delicious food. Picturesque towns or just countryside, and of course, grade winds. Okay, now, let's look at the wine. The wine region is located somewhat close to real and Roberto and doable. However, on an international level, it's not as well-known. And I hope this changes because their reality is that the wind from Nevada are outstanding. Now that I have a diverse geography and several features that bring a lot of diversity to the different wine producing areas within the region. These features include the proximity to the Atlantic Ocean in the Northwest, the pyramids mountain range in the Northeast, and the editor River. Due to this diversity, when it comes to wine, the region is divided into fights. You don't have to memorize the substance, but I do want to mention them for you. By the stadium. And Ribera Baca. Again, you don't have to memorize or even remember this, but just please remember Nevada. Now let's discuss the ones. As mentioned before. Because of its vast topography and micro-climates, the region produces a broad variety of styles. Some points, you can find crisp white, aromatic row space, which is by the way, a style that they're very well-known for. Light bodied reds and earthy, fuller body rates. The production, though, is mainly centered around Rosie and red ones. Traditionally, you will find red wines from the indigenous grape varieties, them, but I'm also got matcha, white lines from the grape varieties, beautiful and match up an ANCA. However, the region also produces wines from other varieties. Cabernet, Sauvignon, Merlot, Pinot, Chardonnay, and more. Now, I know what you're thinking. How am I going to pick a line from Nevada? I didn't really know what it's going to taste like. Well, on average, most reds tend to have high acidity. So this will mean that they will feel fresh, not heavy in the mouth. And another thing that I suggest is pretty easy to check the label and to read whether they spent time on or not. If the one spend time on OK, you can expect it to have more complexity. If it did not spend any time. I know because then it's probably a younger one. It will have more of a bright red fruit aroma and flavor profile. In summary, nevada offers a wide range of remarkable wines, and I highly recommend you try them how to read a bottle of Nevada while the classification is not bad deal. So Navarro denomination of origin, and it will more than likely mentioned the grape variety that was used to produce the wanting and also whether it's spent any time on OK or not. 14. Galicia ns: We are going to jump all the way to the northwest corner of Spain, north of Portugal, to the region known as green stain. And this is then, if you look at photos, you will probably think you are looking at images from Ireland or Scotland. This region is just breathtakingly beautiful with all its lush greenery. It's on the coast by the Atlantic Ocean with many rivers and estuaries called that cut through the rolling hills. Some of the best fish and seafood, if not the best, in all of Spain, can be found here. The lines of spades, finest white wines are produced in Dionysia. You can also find exceptional red lines. As with the rest of the regions, the line history dates back to the time of the Romans. And even further back. It's an area of old vineyards with many hanging on the clips of the hills overlooking the Atlantic Ocean. And the large number of indigenous varieties responsible for the production of their outstanding wines. The main white grape variety is burning. This variety can produce different styles of wine, but they will usually be high in acidity with a touch of solemnity and aromas of citrus and stone fruit. They can be light or medium bodied. Other common white grape varieties of the area are, which produces wines that are fooled or body than anybody knew that I shall do that. This also is a grade that produces puller bodied wines and low data. The most common red grape variety of means, which is the same grape variety that we looked at when we spoke about BSL deal, investigate Leon. And while men see I just loved widespread and see how they are fresh, lighter to medium bodied with red fruit aromas and a bit of spice and herbal notes to them. Okay, So these are the styles of wines that you can find in the ECF. Now, we're going to take a look at the main denomination of origin within the ECF. And remember, this is where you will actually see written on the bottle. It will not say Galicia. It will give you the different deals with Indonesia and we'll take a look at the main ones deal. This is the most well-known deal of the region of gunfire. And it's divided into five sub regions that spring up along the coast within the Atlantic. I will mention the sub-regions so that you are familiar with them if you read them in the box. But there is no need for you to memorize them. The Beta and Omega by lopsidedness, Sotomayor, oral side and come down a little tear. The lines from various ****** are usually based on the budding of variety and can be easy drinking with all the characteristics of the variety. Like high acidity, minerality, freshness, citrus aromas, and so on. Some are also aged in oak. And this brings a layer of complexity, structure, aromas, and flavors to the wine. In some of the sub-regions, the Ivan email grape is blended with some of the other indigenous varieties, producing a wine with a broader range of aromas and flavors. A small amount of red line is also produced in this region from the grape variety. Men CEA. Yes. We made a deal, is a deal denomination of origin located to the east of various patients deal. It also has a large Atlantic Ocean influence, but it's slightly warmer than via spacious. Both white and red wines are produced here, but mainly white wines from the grapefruit I shall do. It's not the common wine that you find every day, but they are becoming incredibly popular for a good reason. 19. Cava & Spanish Sparkling Wine ns: There is so much to say about Spanish sparkling wine. It has a fascinating history and it is one of the best valued in the world that was first produced in fact alone, yeah. Specifically in the region of benefits, which we learned about when we were discussing the deals from Catalonia in the year 1870 to just set created the first got wind that lived in France. One thing is for sure though, that is a premium sparkling wine at the best value. You can find. Within there are several classifications similar to still wines. You have. Gaba, gaba, get angry FERPA. But these are all the classifications within the video. But you also have a classification, Spanish sparkling wine from a set of producers who decided to place more emphasis on winds that truly showcase the heart of the region of benefits. But now that you've learned so much about Spanish wines and you know the main denomination of origin. I think it'll be much easier for you to understand what's on the label and to select the one that you want to try. So let's look at a label. The name of the line or the name of the vineyard will appear in either medium or large letters. And this will always be in the front. The producer. This is the name of the winery. The Appalachian. The Appalachian that you will find for Spanish wines are DO, DO C or D or Q, Venus, they lacked the era and Venus the Bible. Throughout this course, we mainly focused on denomination of origin, wines deal or denomination of origin classified DOC. But both Venus and Venus, the paddle are excellent. They are not that easy to find outside of Spain. So if you find one, I encourage you to try it. The vintage of the wing. This is the year the grapes are harvested for this specific wine. So I encourage you to explore those stories and make them a part of your wine experience. 21. Summary of Spanish Wines ns: I know we just went through a lot of information. A lot of regions, names, denominations of origins, styles of wine. So let's do a very quick recap. And don't worry about memorizing all of this. I promise that the more you consume these lines, the more familiar you will be with the names, styles, and your personal preference. But you'll have DOC, a famous Spanish red wine, very well-known further along aging processes. The main great use for yoga is temporary in nature. These are long lived whites. Do. Another famous Spanish red wine, also uses as a blend, the grape variety. As real hard. These are long lived wines that actually compete with each other. Taste them together to see what your preferences. The ESM V0, spectacular red wine from the grape variety, produces medium body in lines with red fruit aromas. A great alternative to Pino Anwar. Nevada deal from the region of Nevada. This is where the running of the bulls happens. They produce great row space, great red lines from several varieties, but mainly from, gotta match them. In the red. These are bright winds with beautiful erroneous chocolate. Alina deal. We're in the Basque region now with the famous chocolate wines. These can be both white or red. But it was born in the region of Beni, this in data Lumia. And you cannot go wrong with gaba. 22. Spanish Wine Pairings ns: We just looked at a lot of different wine regions and styles of wine. And of course, each one of these wines Pierce lovely with different styles of food. We will look at every single line again and what they pair with. But what I want to do as names some different dishes and tell you which Spanish wine they could pair very nicely with. You will also find these suggestions in your resources section, a green salad with the light dressing. I will select a white wine from yes, by chez DO, or a white wine from one of the three chuckling deals. Now if it's a solid that has a heavy dressing on it, I would probably go for a wine that has more structured, still a white wine, but the one with more structured, something like a video or a video or a DOI, a chastened charcuterie board. I think a glass of rows stay nice and crisp and bright. Would it be lovely with cheese and charcuterie? Maybe from the island of land settled thing. That's the Canary Islands. So the D0 would be Landsat or pick DO grill tuna. Tonight is usually pretty meaty. So my preference here would be a red wine with light to medium body, like piano song DO from the grape variety and, and see it with white fish. I would select a white wine from that. Do I think it would be a lovely pairing? Say VJ, chuckling, definitely a Jacqueline, the thinness of the signature and the wine would pair so nicely steamed muscles. I would definitely go with the white wine from various by shes DO. And if you happen to get a chance to actually try the muscles from this area, the area of Ganesha. Make sure you try them because they are amazing. Grilled chicken. I prefer to have chicken with white wine and I would probably go with a white wine from biogas DO Turkey. This pairs nicely with the fuller body wife, or a lighter foggy read, like the white wine from rebuttal DO or a red one from Nevada Faculty deal, beef hamburger. For a hamburger, I would go with a red wine from home MIGA deal. That's a big and juicy wine that I think would complement very nicely with the burger. Lamb. Lamb is one of my favorite dishes. And I would probably pair it with a medium to full bodied wine, like a video card DOC, or be better than Duetto deal. I would also enjoy these winds over a long period of time while eating my meal, pork chops. With pork. I would select the red line that is not too powerful by one from Nevada, deal with the grape variety of being got too much at stake. There are many options for stake, but readapt the acute wouldn't be my first option. Chocolate cake, it's time for dessert. So how about a glass of gamma? These are just some options. But at the end of the day, the best part about pairing wine with food is discovering what you like, your personal preference. 23.
