About This Class

What a special treat I've got for you today. We are making one of the most popular Stir fry noodles of all time, Chicken Chow Mein! Chow Mein in chinese means, stir fry noodles. I'm sure a lot of you have had this dish at least once in your lifetime and today, I'll be showing you that it's a lot easier than you think!

Chicken Chow Mein is one of the most popular dish for takeout at my family's restaurant. It's made with fresh vegetables like cabbage, carrot, green onions or feel free to add in your favorites. For the amazing flavour, I'll be using Oyster sauce which gives the chow mein noodles it's savoury flavour. Don't worry if you can't find chow mein noodles. In this course I'll talk about many types of noodles you can substitute with.  As long as you follow along with me and using the sauces to stir fry. Any types of noodles will turn out amazingly and simply delicious!

Ingredients

  • 8 oz Chicken Breast Slice thinly
  • 450 g Chow Mein Noodles
  • 4 Stalk of Green Onions . Scallions diced and green part cut 1 inch long thinly
  • 1/4 Cup of thinly cut carrots
  • 1/2 Cup of Napa Cabbage thinly chopped

Marinade For Chicken

  • 1 Tbsp Light Soy Sauce
  • 1 Tsp White Pepper
  • 1 Tsp Baking Soda
  • 1 Tsp Sesame e Oil 

Stir Fry Sauce

  • 1.5 Tbsp Light Soy Sauce
  • 1.5 Tbsp Oyster Sauce
  • 1 Tbsp Dark Soy Sauce
  • 1 Tsp Of Sesame Oil

1. Introduction: Bunker. Today I'll be showing you how to make chicken challenged me. And I'm pretty sure most of you knows jack and Xiaomi or ordered this dish once, once in awhile for, for a weekend splurge. But one from my parents restaurant, the chicken Xiaomi is the most besides the chicken fried rice, but the chicken Charmaine is the most popular dish that we sell at the restaurant. There's many different versions of the chicken chow main. And today I'm going to show you my version of the Charmin, which is really easy, very simple to do. This chicken Chairman recipe, which I'm going to show you today, is going to be cooked with the Xiaomi noodles. And if you can't find Charmin noodles in your grocery stores, which I'm pretty sure you'll be able to because now these days, like most of the groceries or smoke carried the child may noodles, If not, Asian supermarkets both definitely have it. But if you can't find it, you're welcome to use 1to1 noodles, AIG noodles. But for me, if sometimes I'm really too lazy to go out to get me noodles. I know I always have noodles and for instant noodles to stir-fry with the chicken and vegetables also taste very delicious as well. So for the vegetables, you can pretty much use any type of vegetables that you'd like. For this one, I just chose something that's really simple and easy to do. I have the Nakba, Napa cabbage, carrots and green onions. That's all I have. So you can very well put like green peppers, red peppers, anything that you can imagine, you can pretty much put this, put it in this, in the stir fry. So for the protein, I'm using chicken breasts. You can use chicken thighs. That works too. The reason why I'm using chicken breasts because it's just more leaner and healthier. And I know most of you probably think that using chicken breast might be a little bit too dry or tough when you'd stir fry too long. But I do have a secret that I'm going to show you to tenderize the gym breaths when you stir fried and eating with the noodles is perfectly balanced. As for the stir-frying part, I'm going to show you to do the stir-fry in a walk. But if you don't have a walk, it's okay to use a pan. Stir-frying from home versus the restaurant is you have a difference in taste. The flavor is still the same, but stir-frying from the restaurant, I find that because they use a walk with such high heat, it's got that smokiness flavor, which you can't really achieve that from home anyway. So as long as the flavors there, it's still going to be super delicious. So this is all I'm going to tell you for now. And let's get started. And I will show you how to make the most delicious chicken. Tell me, Okay, let's get started. 2. Ingredients: When it comes to ingredients using fresh noodles rather best for this dish. Or if you don't have that on hand and can't find any at the grocery store that day, you can use one time noodles, ate noodles or even instantly dose. Just follow the cooking instructions from the package. I love using colorful vibrant vegetables in my Chow me. So for this dish, are they using cabbage, carrots and green onions? But feel free to add in your favorite vegetables. Let's start off with the ingredients are being using. Here is the chairman and he knows that I got from the grocery store today. It will say on the package Xiaomi noodles. You can find this noodle in most of your nearby grocery stores if you don't, if you can't. Finally, there's also other substitutions that I mentioned before. Like you can use egg noodles, one tornadoes or even instant noodles. Sometimes I just use instant noodles as a last-minute resort. Next, of chicken breast, I'm using a lean protein for this because Ciao mi Nieto should be a, I'm trying to make it a healthy dish because my girls love to eat noodles and by using chicken breast is leaner and a little bit healthier. So this is green onions. I have about four or five stock. One whole carrot and cabbage. This is the Napa cabbage I have here. I love Napa cabbage. It's one of my favorite vegetable. And this seasoning here, I have baking soda, white pepper, and sugar. Boisterous size. And you can pretty much find oysters us everywhere now, especially in Asia. Good. Flight, soy sauce, dark soy sauce. And finally, sesame oil. Okay, So this is all the ingredients you need. Not too much. Okay, so I'll see you in the next video. 3. Prepping: Let's start prepping our ingredients. First. I have the carrot. I like to use the bigger part. So I can cut thinly into a rectangle shape, line them all up. And so it's easier for you to cut it into thinly strips. A quarter cup of thin lead cut carrots. Then for the green onions. For stock of green onions, Scalia, scallions diced and green part cut one-inch long thinly. I would cut off the root first, line them up. Pen as you can see, I like to cut the part where it ends for them. Wait to the get's to the greener part. So that's the scaling part, right? Cut that out and dice it up, diced up the stallion. Put it aside. And as for the green onion part, line them up and just slice it down in the middle, split them in half, or thinly slaves long strips. So so be careful when you cut it flat and just slice it down the middle. Next we have the cabbage, half a cup of Napa cabbage thinly chopped. Here, I'll only have to use half. Save the other half for your, for another stir fried. I normally use half for either in a soup that I'm making or just another stir fried that whatever I have two left over from a previous slide. So it's good to have on hand cut that itself for the cabbage, cut that in half and just slice it as thinly, I would like to come on my vegetables the same size. So when you stir fry, it cooks evenly. Once you're done, I will have it in a strainer and rinse that out in the sink. After all your vegetables are. Put it on a plate and set aside. Now, I'll show you how to cut the chicken breast. Eight ounce chicken breasts skies thinly. First, I will have one laying flat down. I like to slice it three times through. Okay, so that's the first slice set aside. And for the top part, again, press it flat. Just use a sharp knife and just place, slowly slice it through the middle. 1 third, then line them on top of each other and cut it into strips. Once you have your chicken all cut up, put it in a plate or a bowl, and we'll have it ready to marinate. For the marinate, I have light soy sauce, one tablespoon of light soy sauce, one teaspoon of white pepper, one teaspoon of sugar, and a drizzle of sesame oil. And don't forget about the baking soda. One, teaspoon of baking soda. That is the secret ingredient. I use this so it can soften the chicken and make it really tender. That is my secret. Now, you know, once you have mixed it through Saran wrap fridge, I'll refrigerate it for at least 45 minutes to an hour. This is the stir fry sounds for the noodles. 1.5 tablespoon of oyster size, 1.5 tablespoon of soy sauce, one tablespoon of dark soy sauce, one teaspoon of sesame oil. Just a pinch of sugar, mixed smell and set aside. Okay, so that's our other prepping that we're doing for ingredients. And I will see you in the next video. 4. Cooking: Let's cook in a pod or a walk. I have some hot water and would like to boil the Noodles. I'm using my child main unos and I'm just going to boil it for a minute. If you're using other noodles, just follow the instructions on the package. After the noodles or boiled. Bring them over to the same strain. Water. Leaving on, tried to shake off the excess water and leave it on the side. Have a walk or a pen ready, drizzle some oil and turn up to high heat. You want to have the walk extremely on high heat to pan fried noodles and in a good amount of oil and turn it on. And what a sear on the noodles. I like to add this extra step because the noodles are pan fried so that they are brown just slightly. And the noodles are crispy to eat. To give out a different texture for much yummy or Charlie. Charlie noodles absorbs a lot of oil. So if you see that it's getting pretty dry. Just a little bit more. I have a plate ready and put the Knidos aside. He used the same author pen and start to stratify the carrots first. The carrots takes a little bit longer to cook, so I would cook that first. Just a few minutes, stirred in the walk and also have it on high heat. Then the cabbage and the green onions. You just need to cook it for a few minutes. After that, put on a play and set aside k. So now we're going to start, Start Frame the chicken. Let it dry for a little bit before staring and around. Cook the chicken until you don't see rawness anymore. Then add in the vegetables. After a couple of minutes, I would add in the new dose. Just spread it around and use a tongs to mix the noodles well. Spread the noodles apart. And the stir fry sauce that you have prepared earlier. When you're stir-frying the noodles. I find that I like my noodles a little bit more golden brown. By doing so, you just have to add in a little bit extra of deep dark soil SOSP, it's your own personal preference. I like mine a golden brown. So if you're stir-frying and you find that your noodles are still the lighter side, then I will just add a little bit more of the darks are soft and mix well together. Just be a few more minutes. When I'm cooking, I always like to give it a little bit of a taste test in between to see how the flavor is. And if you need to add a little bit more, like soy sauce or oyster SaaS, you're welcome to do so. Okay. So about firings after a few minutes, don't forget to add the scallions. Mix it all up. Okay. There you go. Skip it onto a plate, and there you have it. Doesn't that look delicious. I hope you enjoy this video. And I'll see you in the next video for my final thoughts. And some key reminders. 5. Final Thoughts: No, they can have it with hot chili oil. Was Sir, breccia goes really delicious like that. One. I check the Asteraceae. Okay, Miss see. And this is my version of the chicken chow main. This is, I mean, as you can see, my daughters are loving it. They love Charl main and it's the most easiest and simple and quick recipe to do on a weekday and when you don't really have time to make dinner. Okay, so here is some of the field key reminders that I wanted to point out. So number one is, when you start making this, I would start marinate the chicken first. And the secret ingredient for many, the tender chicken is baking soda. So baking soda, tenderize chicken. And when new marinated, when you put all the ingredients together, marinate it and put it in the fridge. The baking soda tenderize the meat. So when you stir fry it does is not dry and it's not tough to chew. Okay. I like to freeze my chicken breast for about 35 minutes, 40 minutes. So when I slice into it, it's easier to get the thickness or the thickness I want. It's all up to you. You don't have to do it is just for any meat. For me. If I want to get a thin slice, always freeze it for about 45 minutes to an hour, depending on how thick the, the meat is. So when you slice into it, you get a better cat. And secondly, the noodles, I like to stir fried the noodles first in a very high heat just to get it brown and crispy. You don't have to do that, but it's just an extra step to make the noodles. To give that noodles more, that the extra flavor and that a little bit of crunch. Okay, so turn on high heat with lots of oil stir-fry until it's like a little bit golden brown. Take it out, put it aside, and then start cooking your vegetables and then your meat and adding everything else together. So like I said before, the this dishes so versatile. You can add any type of neat, you can add any type of vegetables, as long as the flavor, like the marinate that you just follow from my recipe, it will go perfectly well with either chicken or shrimp or just a vegetable charming for any type, for any of you that is vegetarian. And works really good to just add a lot more vegetables to it, right? For the chicken, I like to cut it in small pieces. When you stir fry and high heat, it cooks really fast. So once you have the chicken cut, pulling the vegetables and the noodles, drizzle with the sauce. The marionette South that I taught you. And there you have it. And there you have it. It's like the most easy, simple, charming arrows that you'll ever make. But hopefully you can make this for dinner tonight. Take some pictures put up on the gallery board.
