1. 01 Introduction: Welcome to this class. In this class, I will teach you how to make these peppermint sprints cookies. First, I will teach you how to make the cookie dough. Next, I will teach you how to use the cookie press to form the cookies. Then I will teach you how to sprinkle on the sugars. Finally, I will teach you how to bake and cool the cookies. I am a self taught baker. Many years ago, I decided I wanted to open up my own home bakery. Part of this business was going to farmers' markets and festivals and making treats for special occasions. These cookies are excellent things to sell at those farmers' markets and festivals. I had this business for several years until my husband got a job offer in a different city. We felt like this was a good move, so I closed my business, and we moved to the new city. Now here in the new city, I do not want to go through the steps to open up another home bakery, but I still love baking as a retired teacher, I enjoy teaching. So I have decided to share my skills with you on skill share. This class is aimed at the baker that would like to learn how to make a spritz cookie, which is a little bit different than the traditional spritz cookie. I look forward to teaching you the skills in this class. Let's move on to lesson number one, making the cookie dough. 2. 02 Making the Dough: We are ready to make our peppermint sprits cookies. Let me show you how we do this. To this bowl, I'm going to add my three fourths cup of unsalted butter and my half cup of sugar. And we want to beat this until light and fluffy. I'm going to start it on low till the butter breaks up a little bit, and the sugar gets integrated. Then I'm going to speed it up to medium high. And this is gonna heat for about 3 minutes until it's light and fussy. So we'll be back about As you can see, that's very light and fluffy. I now want to scrape my bowl down, and I'm going to add my egg, my two cups flour, my half teaspoon of salt, my one teaspoon of peppermint oil, and my one tablespoon of milk. We're going to start this on a lope. Once the flour gets pretty much mixed in, so it won't fly out, we'll turn the bed up to a median. Now I'm going to stop it right there so that I can put in just a couple of drops of red food coating. And then we also want to mix that in. So we want our dough to become a light red or dark pink. You got up. Put in better. And there we have our cookie dough. In our next lesson, I will show you how to use the cookie press and form the doughs so that we're ready to bake. 3. 03 Using the Cookie Press: We are ready to start putting the cookie dough onto the cookie sheet. Now, my dough was a little bit loose, so I chose to put it in the fridge for about half an hour or more so that it could become more firm. Here is our cookie press. And I'm going to start by doing a candy cane cookie. So I put the stencil in the bottom there, and I'm just going to rest that on top of that piece of plastic. And I'm going to take my cookie dough and push it down in to the cookie press, se my spoon to push it down in further. And once I have that full, I'm going to oops. I need to get this all the way open. And then I just screw the top on. Now I just put this on the cookie sheet and I click I have a cookie there. Sometimes you have to click more than once it to come off, and then you end up getting a little bit bigger cookie than you anticipated. I'm going to try a different one. I'm going to switch and try the bell. It's got bigger opening and hopefully it'll come out better. That did come out a little bit better. For some reason, this does not want to come off, so I'm scooping it off that way. Let's try another one. For some reason, this is sticking in the press. It may because I made another batch earlier today and the press just did not get clean enough. I don't know. If it gets stuck in the press like mine is, you can use a little spatula and let me show you what I'm doing. You'll see that's there. I came out, but it didn't come off. I'm just using a spatula starting at the bottom and just carefully scraping up and bringing it down. That's not the best way to do it. But for some reason, this one is sticking and so that's the way I need to do it. Now I'm going to try one other. I also wanted to do some flowers. Let's see how the flower one works. Oh, there we go. That one worked with two clicks. I need to fill my press up. Maybe now that I've worked some through, it'll work better with the next one. Let's try this again. Here we go. Here we go. Now we have it working. So the point sea is definitely working better than the candy cane did. I'm finding it's taking about 1.5 clicks with this one. The other thing that I found with this one, I've sprayed this down occasionally with cooking spray, and it's made it so that that gets released. We have a few bells and we have some poinsetas and this particular cookie sheet is full. Before I put this in the oven, I want to sprinkle this peppermint sugar on top of my cookies. This is now ready to go into the oven. 4. 04 Baking and Cooling: We are ready to bake our cookies. The oven has preheated to 350 degrees, and we're just going to put those cookies in. And we're going to bake them for 8 minutes. We'll be back in 8 minutes to check them. Our timer is about ready to go off. So let's check our cookies and see what they look like. There's our timer. When I pull these out, you can see how lovely they look. We're going to let them cool on the pan for a minute or two and then move them to a cooling rack. These have been setting on here for just a couple of minutes so they can start to set. Now we're just going to use our spatula and bring them over to the cooling tray so that they can completely cool. And there is our peppermint sprits cookies. H 5. 05 Final Thoughts: Thank you for taking this class. We had fun making our peppermint sprits cookies. We first learn how to make the cookie dough. We then used the cookie press and formed our cookies. Then we sprinkled the sugar on them. We finished by baking and cooling our cookies. I hope your cookies turned out the way you wanted them to. Your project for this class is to make these cookies. The recipe is in the project section. Please make sure to post a picture of your cookies when you're done, and let us know how it went. I look forward to hearing from you from my kitchen to your kitchen, have the baking.
