Pumpkin spice caramel sauce

Hello dear friends, what a beautiful, beautiful autumn afternoon! Welcome to my class. Today we are going to make pumpkin spice caramel sauce. It sure adds warmth and sweetness to your life.

In this class, I will show you step by step the method as well as its reason behind these steps. The recipe is attached as a reference. You are encouraged to adjust according to your taste and make it your own signature product.

Ingredients: (For making 4 bottles of 8oz each)

  • 2 cups granulated sugar 
  • ½ cup heavy cream
  • ½ cup of pumpkin puree
  • ½ cup of applesauce
  • ½ cup of milk
  • ½ cup of water
  • 1 tablespoon of pumpkin spice
  • ½ tablespoon of vanilla extract
  • ½ tablespoon of sea salt

Preparation: 

  • In a large saucepan, pour in ½ cup of water then the 2 cups of sugar. Start with a slow fire to help sugar dissolve. 
  • Gradually increase the fire to medium till the sugar melts completely. 
  • Keep the sugar syrup bubbling for 5 minutes or till it turns golden.
  • At the same time, mix cream, pumpkin puree, pumpkin spice, vanilla extract, sea salt and applesauce in a blender for 1 minute or till it is smooth. If too thick, add milk or water to dilute.
  • Slow down the fire and pour in the mixture to the sugar caramel gradually. Stir vigorously until the sugar and mixture are incorporated.
  • Stir gently and simmer for an extra minute till the caramel sauce reaches homogeneity.
  • Pour into the canning jar and keep it air tight. 
  • When sealed, this caramel sauce stays up to 18 month.
  • Once opened, please refrigerate and consume within 2 weeks.
  • If the sauce separates, a gentle stir can restore its uniformity. 
  • If it hardens, microwave for 10 to 20 seconds to liquify.
