1. ClassOne Introduction: Hello, my name is Patricia Stanley and I am with Patricia's Focaccia Wood Forest. In today's class, I will be teaching how to make focaccia from scratch and how to make a sunflower design. Stay tuned. 2. ClassOne MakingDough: Now let's add in the double zero bread flour. We add it in and stir and add a little bit at each time so that it doesn't clump up and you don't want it to dry. This is going to be a higher hydration dough, so it is very important to add just a little bit as you go. And then we cover with a damp cheesecloth to seal in all the moisture and allow it to ferment. Now that we have waited 30 minutes, we will now fold just about five times from the edges to the center. Now, you don't want to do it too much as that will break the gluten in the dough. This is what it should look like now. Then we cover it back up for another 30 minutes. And make sure that the cheese cloth or breadcloth is damp so that it allows moisture to seep into the dough. 3. Class One DesigningFocaccia: Extra virgin olive oil to the bottom for the crust and then position all of the pieces of yellow bell pepper, along with some dried herbs for the middle on the outside, and then fresh thyme around the edges. Press all the peppers to the center. And now that the focaccia design is ready, let's put it in the oven today. Let's wait about 35 to 4.
