About This Class

We all adore Ice Cream and Italian Ice: in Italy we literally can't go a day without eating either one of them!

We are real experts :) and as a foodblogger I experimented all possible methods to conveniently prepare at home my own Dairy Free Ice Cream and Italian ice with healthy and tasty ingredients. Moreover I strongly believe in using the tools I already have at home before buying new ones, and that is how I learnt to substitute the Ice Cream Maker with a Mixer or a Hand Blander.

In my class I'll share with you all my secrets and a few hints on the Italian way to do it!

I'll show you how to prepare smooth strawberry and chocolate flavors, fruity berries or peach ice creams and two traditional Italian Ices (Lemon and Coffee).

Once you learnt them all, you too won't spend a day without pampering yourself, family and friends!

1. Introduction: Welcome to my kitchen. My name is Elena Maria Manzini. I'm in Italian food blogger, video and radio host. In this glass, I will show you how to prepare fantastically refreshing dairy free treats for the hot summer season or for any other season. If you want to temper your family, kids, friends or just yourself, why not? In Italy in the summer, we eat a lot of gelato in granita with our day who held, Of course you know it. I scream and Italian ice. I chose to show you the dairy free version off the ice cream because first of all, I'm lactose intolerant. So this is what I eat, but also because it's healthy, fruity, and you can definitely eat a lot of it without regrets. Another important feature off the classes that you want needs an ice cream maker machine. You'll just be using the tools you have at home as a class project. I will ask you to invent your own flavors, and I'm pretty sure that while experimenting, your family and friends will be very, very happy. So I hope you little role in my class and to see you in the next video. Joe 2. My Secret and Tools: thank you very much for enrolling in my class. So what is the secret behind preparing a dairy free ice cream and nice cream with no milk or no habit? Cream secret is frozen fruit. You have to peel it, chop it and live it and the freezer until it's frozen, too. 23 hours usually, but if you want to be sure, you can leave it overnight. What about the tools? I told you we will not be using an ice cream maker machine. First of all, I'll show you how to make it with a mixture. This is just a top part off course. Another trick is to leave the blade in the freezer as well. For the second version off, the recipe would be using a hand blender. I found out that for some fruits it's better to use the hand of blender and for others to use the mixture. But of course, you hold depends on the tools you have at home and what power they have. Let's stop for a second about the Italian eyes, which is naturally dairy free. This is the only tool you would be using to make it into this muth consistency. We all love Ah, for IQ. Shall we start with the ice cream 3. Smooth Dairy Free Ice Cream: to prepare an extremely creamy ice cream, you can use frozen bananas as a base. I find it perfect for flavors like strawberry or chocolate. Let's see ingredients and preparation for both of them. Before using the frozen fruit. Leave it outside of the freezer for at least 10 minutes for the strawberry ice cream. I used double the amount of strawberries compared to bananas. So here we have a pound off frozen strawberries and half a pound off sliced frozen bananas . We put everything in the mixer and in a very short time we have ice cream for 56 people. To top it, you can use fresh strawberries or sugar Sprinkles or both of them. You have probably noticed that I have served the ice cream right away, right after mixing it. You can do it if you like a smoother consistency, or you can live it in the freezer for 10 to 15 minutes to have a harder consistency. Let's see the ingredients. For a chocolate ice cream, £1 off, slide to frozen bananas In the four spoons of dark cocoa powder. Choose the one with no extra fat sugar and a force no milk mix it with the mixer and then serve it with hateful nuts on top. I found this lovely dairy free white chocolate cards, but if we can't find them, you can top it with more chocolate. Shall we start with chocolate or strawberry? And, of course, if you have more ideas on how to prepare an ice cream with a banana based believes to share them with everybody else in the class as a class project in the next video, we're gonna learn how to make a fruity ice cream. 4. Fruity Dairy Free Ice Cream: as I have promised you in this video, I'll be showing you how to prepare a different version off the ice cream with a hand blender. I'll be using frozen fruits and dairy free yogurt just because I want a touch of creamy. But if you do want to use a yogurt, you can just bland to the frozen fruits and you will have a sorbet. Now we'll be seeing how to make mixed berry ice cream and peach ice cream, just like I said in the previous video, before using the frozen fruit living outside of the freezer for at least 10 minutes. Here we have £1 of frozen mixed Berries and two spoons off blackberry Soy Gilbert. I'm not adding any sugar or honey because there's already a little bit of sugar inside of so yogurt used began the blender, and in three minutes you have your ice cream. I'm serving it with gluten free ice cream wafers. You can also add white chocolate flakes or fresh fruit for the peach ice cream. £1 off frozen peach and white soy yogurt. Again, we use the blender. I'll be serving this one with Candida Ginger. These are my favorites, but you can use all different kind of fruit. Just mix it together. So if you invent new flavors shared with everybody else in the class as a class project, in the next video, we will learn how to make Italian eyes. 5. Italian Ice: in the summer time in Italy, we cannot survive without our granita or Italian eyes. We all love it very much, and we all know that. Actually, it's such an easy recipe to make. Even without an ice cream maker machine, we just need a little bit of patients. It's just a combination off sugar syrup with fruit juice or any other liquid your life just like coffee, for example. Now I'm gonna show you how to prepare the traditional lemon Italian eyes and coffee Italian eyes, and you will see what I mean. When I talk about patients, order fork for the lemon Italian eyes. You use the same amount off lemon juice and sugar you're I have seven ounces each and double amount off water. Here's a trick I want to teach you. Use on treated lemons. Cut one into quarters and living in the water for at least one hour to relieve the flavor. It would be fantastic to make the syrup. Melt the sugar inside a water on a low flame. He doesn't have to boil, then let it cool filter if you need to, and then added to the filtered Limoges put it in the freezer for at least two hours, then remove it and break all the crystals created by the eyes with the four. This will help you to have a perfect smooth consistency, but you will have to do this again and again another couple of times. They get out off the freezer 10 minutes before serving, and you can also makes it again, either with the four core hand blender. If you want to consistently even the preparation off the coffee Italian eyes is the same, but the ingredients proportion is different. Seven ounces of freshly brewed coffee, seven ounces of water so the same amount and 2.5 chances off brown sugar at the vanilla being, if you like, as before we prepare in the sugar syrup, melting the brown sugar in the water on a low flame opened the vanilla bean and added to the liquid. Let it cool. Mix it with a coffee that has to be called as well and then put it in the freezer. Now you have to do everything you did for the lemon Italian eyes. So two hours later, just break the Christian off the eyes with the fourth, then wait for another two hours and do it again. Wait for another two hours and do it again. It will be a fun evening for everybody. Let me share with you a little secret here in Italy. We eat to get Anita Italian eyes for breakfast in the morning with questions so you can organize a different kind of breakfast for your family and friends. And tell them you know all about the Italian lifestyle off course. If you invent to try out new flavors off granita, it's like a nice please share them with everybody else in the class at a class project. 6.
