When it comes to breakfast ideas, most people will instantly think of eggs. They’re inexpensive and go with almost everything, and we can bet you probably have at least one or two somewhere in the fridge. 

If you’re a novice in the kitchen, cooking an omelette can seem a little overwhelming, but they’re one of the easiest dishes to make when you’re stuck for ideas for breakfast. Veggie omelettes are ideal for squeezing in at least two or three of your five servings per day before you’ve even left the house.

Most omelettes will use two or three eggs and will require a nonstick pan for expert flipping. Cook your eggs on a medium to low heat to create a fluffy pancake. Once it’s looking mostly set, add all of your fillings to one side and flip the opposite side over to create a half-moon shape, and cook for another few seconds until you’re happy with it.

Frittatas and Tortilla de Patatas

Frittatas and Spanish omelettes, or tortilla de patatas, are one of the best breakfasts to make for a big group or if you’re planning to have leftovers for later in the week.

Both start with an egg base, but frittatas add cream or milk into the egg mixture and are often made with more ingredients than a Spanish omelette. Peppers, sausages, garlic, and onions are all commonly used in frittatas, whereas all you need for a Spanish omelette are potatoes and some onions. 

The biggest difference between the two is in how they’re cooked. Like a traditional French omelette, the tortilla de patatas is cooked only on the stovetop. Frittatas are finished in the oven and, thanks to the added dairy component, are more like a crustless quiche making them one of the best breakfast recipes for carb-conscious diets.

Vegan Ideas for Breakfast

Egg-Free Scramble Bowls

Vegan breakfasts can be just as tasty as those with eggs, dairy, and meat.

Sometimes it can feel impossible to come up with filling and delicious vegan ideas for breakfast when so many recipes are centered around bacon or eggs. But tofu works well as an egg substitute for when you’re trying to think of savory breakfast ideas, and it can be used with almost any fruit or vegetable that you have in your pantry.

Start by crumbling extra-firm tofu (this is important—anything less than extra-firm will fall apart when you start cooking it) and mix with almond milk, nutritional yeast, a teaspoon of Dijon mustard, garlic, and any other spices you’d like. Once that’s sauteed, you can start adding your other ingredients. Salsa, pico de gallo, and tomatoes are perfect for scrambles, as are roasted vegetables like peppers, broccoli, and sweet potatoes.

Pancakes and French Toast

But isn’t batter made from dairy? Not always! Milk alternatives like oat and almond milks work just as well as cow’s milk for making a thick and tasty pancake batter

Mix them with oat or whole wheat flours, baking soda, vanilla extract, cinnamon, and nutmeg before adding in any of your favorite ingredients. Bananas, blueberries, and pumpkins are ideal for cooking into your pancakes or topping your french toast before slathering on the maple syrup.

Healthy Breakfast Ideas

A healthy breakfast doesn’t have to be boring, and shakshuka is a great way to add some spice and flavor to your morning meal. Originating in Northern Africa, this dish is made up of eggs poached in a thick tomato and onion sauce and takes around 30 minutes to make, so it’s best for weekends or work-from-home days.

How spicy you want to make your shakshuka and what extra ingredients you want to add is completely up to you. Commonly used spices include paprika, cumin, chili powder, and garlic, but you can also add a pinch of cayenne pepper if you’d like to turn up the heat. 

Acai Bowl

When you’re looking for something more filling, smoothie bowls like an acai bowl are ideal. An acai is a small purple berry commonly found in Central and South America, packed full of healthy antioxidants and vitamins. They can be tricky to find whole, but plenty of stores now carry frozen acai or acai powder, ready to throw into your blender for your smoothie.

Once you’ve made your acai smoothie, pour it into a bowl rather than a glass and top with anything you’d like! Other berries, chia seeds, nuts, coconut flakes, or cacao pieces are all delicious additions.

Start with a base of Greek-style yogurt and milk (any will do), before adding around one cup of oats. Whisk together with seeds, nuts, or seasonings like cinnamon or vanilla before placing in a glass jar or container. An old jam jar, peanut butter jar, or even some small Tupperware make this breakfast easy to transport. Put the jars in the fridge until the morning, and all you have to do is remember to grab one with a spoon when you’re ready to go.

Granola Bars

Granola bars make for a perfect treat at any time of the day but are especially good for fast, on-the-go breakfasts. They don’t require many ingredients, and you can even throw any extra mixture onto yogurt or cereal for an alternative breakfast idea.

Most granola bars start with oats as their base and are held together using nut butter or dates and honey. You’ll want to blend all the wet ingredients together first, including any flavorings like vanilla extract, before folding in the oats and other dry ingredients such as chocolate chips, nuts, and seeds. Spread the mixture out on a flat baking sheet lined with parchment paper and chill in the fridge for an hour before slicing.
